Hello, folks!

This post’ll be a quickie instead of a longie ‘cause I’m pooped after finishing another week of night shifts. I’m off a day early, but six consecutive 10-hour graveyard shifts in a row is still no walk in the park.

On Monday morning, I was ready to face-plant into bed as soon as I got home. Instead, I walked Big-O to school and pressure cooked a pot of spicy collard greens…

…onions…

…and bacon.

Turns out you can make tender Southern greens in about 10 minutes under high pressure. (Hold tight: The recipe’s in development!)

I wanted to break out my new Instant Pot, but I was too tired to read the instruction manual and too lazy to wash it. My new toy is still in its packaging, sitting in our entryway and taunting me. I’m so ready to teach it who’s the boss.

Once the greens were finished cooking, I took off my amber goggles and conked out in my pitch-black bedroom.

When my eyes popped open, it was evening, but the sun was still shining. This is how much this blog consumes me: My first waking thought was “Yay! Daylight savings means I can still photograph my food in natural light!”

I reheated the collard greens and topped them with a new batch of bacon bits (the ones from the morning had mysteriously disappeared into the mouths of my children while I slept).

For our main dish, I grabbed a package of ground beef…

…sliced and sautéed some ‘shrooms…

…minced some frozen bacon in the food processor

…and combined all the ingredients together to form Big-O Bacon Burgers (recipe is in my iPad cooking app).

While I fried the burgers…

…my hubby whipped up a batch of his tasty guacamole.

As soon as the last burger was flipped…

…I yelled at the boys to gather ’round the table.

After I filled my belly with greens, burgers, and nature’s mayonnaise (a.k.a. guacamole), I drove to work for the last time this week.

I’m totally looking forward to spending time with my boys in sunny Austin later this week. Henry will be herding the kids around town while I’m at PaleoFX (so I’ll be without my personal paparazzo this time – don’t be shocked if I don’t post many pics), but our family will be hanging out together in the evenings and stuffing our faces with tasty barbecue. Good times ahead!
