Whole30 Breakfast of Champions by Michelle Tam / Nom Nom Paleo https://nomnompaleo.com

What’s a Whole30 breakfast? For lots of folks, being on a Whole30 means re-thinking breakfast foods. After all, cereal is out. So are toast, bagels, pastries, muffins, pancakes, waffles, and pretty much everything else you’ve been eating every morning since you were old enough to eat solid food. So…whaddaya eat?

Here’s the thing: “Breakfast” foods can be anything at all! As I said in Ready or Not! (you know: my new cookbook, which you should hurry up and buy already, people): “In other parts of the world, people eat ALL SORTS OF STUFF for breakfast every day, from MEAT and FISH to VEGETABLES and STEW!”

Also: There is no law that says you can’t have leftovers! They’re still just as delicious in the morning—and they’re fast and easy to reheat. I know, I know—some people can’t abide the thought of having last night’s leftovers for breakfast. If that’s you, then I have another recommendation for you: My favorite weekday breakfast combo of Sunnyside Salad and Cold Matcha Latte!

SUNNYSIDE SALAD

“Sunnyside Salad” is just my fancy name for crispy fried eggs on a bed of fresh salad greens. Add a sprinkle of sea salt and a drizzle of aged balsamic vinegar, and you’ve got yourself a hearty, restaurant-quality breakfast salad.

COLD MATCHA LATTE

Man, I love sipping this creamy, jade-green beverage in the morning. Try it, and you’ll be hooked, too. In fact, you’ll wonder how something that tastes this good can possibly be Whole30-compliant—but fear not: Melissa Hartwig, the co-creator of the Whole30 herself, has proclaimed my Cold Matcha Latte “totally compliant”!

See?

Obviously, context matters. Don’t drink it in place of a meal or if coconut water makes you crave sugar-y beverages!

About Michelle Tam

Hello! My name is Michelle Tam, and I love to eat. I think about food all the time. It borders on obsession. I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.

  1. Hi Michelle – I’m wondering if you’ve ever tried the Vital Proteins Matcha Collagen for your latte? Thoughts about that?
