It was my second to last night of work and I finally glimpsed the light at the end of the tunnel…

My first meal at the hospital was some homemade smoked turkey thighs (c/o my awesome brother-in-law), cherry tomatoes, and baby carrots.

Right before I left work, I scarfed down a couple leftover sous vide Turkish slider burgers, roasted spiced mushrooms, and sautéed peppers and onions. 

Once I got home, I threw some ingredients in the slow cooker to make a cheater pork stew

…hung out with my itty-bitty Harry Potter fans (outfitted in gear purchased by Fitbomb at Whimsic Alley)…

…and went to bed.

When I woke up in the evening, I roasted some Portobello mushrooms

…nuked some zucchini spaghetti

…and dished out the quick n’ easy slow cooker cheater pork stew.

Here’s my dinner plate:

After my supper, I ran down to Philz Coffee and filled up my thermos with Ambrosia Coffee of God and heavy cream, practiced double-unders, cleans, and pistols. Then, I packed my stuff for work and zoomed to the hospital for the last time this week. Hooray!
