Hurray! It’s my first day of vacay and I got a solid eight hours of sleep last night! Yes, I’m still in a sleep deficit due to my wacky schedule but I’m working on it.

For breakfast, I started making a scramble with leftover ‘shrooms and nuked frozen broccoli but at the last minute I popped it in the toaster oven. Poof! Frittata!

Although this egg-y brekkie was tasty, I wish I’d decided earlier that I was making a frittata because the addition of full-fat Fage Greek yogurt makes the texture fluffier (and by default, yummier).

At lunchtime, I ate some leftover sous vide cowboy steak, broiled asparagus, and garlic cauliflower mashed potatoes….

…and a bunch of mac nuts and coconut flakes. I’d resisted buying more Mauna Loa mac nuts at Costco for a long time but today I broke down and bought three cans. I’m definitely a lost cause because I’m hopelessly addicted to them.

At dinnertime, I baked some sausage and spinach stuffed portobello mushrooms

…and broiled some zucchini.

For dessert, I ate some coconut butter and mac nuts. I shudder to think how much I’ll be consuming once we’re in Hawaii. Eff it! I’ll be on vacation…
