Night two of seven is never pretty – I’m always a wee bit tired and cranky. What? You want me to stop whining and post my food pix already? Why, you ungrateful sons o’ bitches…

My first meal at work was some leftover Bo Kho, steamed mini squash, and garlic cauliflower puree.

For a snack, I ate a super-small container of coconut flakes and macadamia nuts. Really: It was no bigger than a breadbox.

The last meal I ate at work was some leftover slow cooker lemongrass coconut chicken, roasted Portobello mushrooms, and roasted curried cauliflower.

When I got home, I prepared some sous vide Turkish slider burgers

…stuck them in the freezer…

…and roasted bell peppers for tonight’s dinner before turning in.

At 5:00 p.m., I woke up and dunked the mini burgers into the SousVide Supremestir-fried spigarello and bacon

…microwave-steamed some sugar snap peas (tossed with butter and Penzeys Fox Point seasoning)…

…and marinated the roasted bell peppers.

Once the veggie sides were finished, I fried up the mini sliders in some coconut oil…

…and dinner was served.

After dinner, I did the WOD I missed at CrossFit Palo Alto this morning. Then, I downed a handful of steamed chestnuts and a few slices of deli roast beef before going to work. My FAVORITE way to spend Friday night is to go start my ten-hour overnight shift. And yes, that’s your bullshit meter going off.

About Michelle Tam

Hello! My name is Michelle Tam, and I love to eat. I think about food all the time. It borders on obsession. I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.
