Paleo Eats: 8/12/11

I was wide awake on my second night of work, thanks to my large mug of Philz Coffee.

The caffeine coupled with heavy cream kept my satiated until halfway through my night shift. I ate a weird hodgepodge container of leftover roasted chicken layered with marinated roasted bell peppers, Aubergine dip, deli roast beef, and sauerkraut. It was ugly as sin so I didn’t take a picture but the combination was weirdly satisfying. I felt like I was eating a savory Paleo parfait.

Right before I got the heck outta dodge, I ate some leftover cheater crispy duck confit leg, cauliflower mash, and sautéed spinach.

At home, I hung out with my boys until I was too tired to keep my head upright. Then, I went to bed and slept the day away until I was woken up by Li’l-O in the evening.

For dinner, I threw together the ingredients for Surf and Turf Lettuce Tacos and fried up a big batch of Padron peppers in coconut oil…

…that I finished off with a sprinkle of Fleur de Sel and lemon juice.

After dinner, Fitbomb and I read stories to the Double O’s before tucking them in bed. I didn’t have a lot of time to exercise so I grabbed my jump rope and practiced some double-unders outside. Then, I came into the garage, did a few assisted pistols, and rowed on the erg. I exercised for a total of 20 minutes and was sweating like a mofo.

With my meals packed for work, I sped off into the night to tackle another shift at the hospital. Five more nights to go!
