I detest the Bangles’ song, Manic Monday, but I do agree that Sunday is my fun day. I apologize in advance if that shitty song gets stuck in your head all day.

Before leaving the house, I nuked the last piece of Porktastic Spinach and Mushroom Meatloaf and ate it with some leftover roasted peppers.

Coincidentally, my meatloaf recipe is the meal of the day over at The Foodee Project!

We met up with Fit Daffy at the Mountain View Farmers’ market where I picked up my free asparagus

…eggs, fruit, and veggies.

I’m not a girl who appreciates flowers (I’d rather get a box o’ bacon) but these Gerbera daisies sure are purty.

For lunch, we drove to the East Bay to hang out with Fitbomb’s family. We brought over un-Paleo dim sum take-out from Koi Garden to appease the elders and a couple kebab platters from Pamir restaurant for hubs and myself. Fitbomb and I both hate dim sum but it’s hard to pass up a few slices of roasted suckling pig.

Here’s my lunch plate:

At dinnertime, I stir-fried some fajita vegetables (bell peppers, cremini mushrooms, onions, garlic, Arizona Dreaming, salt, and pepper)…

…and finished it with a squeeze of lime juice.

I also made some emergency protein with grass fed ground beef sautéed with onions, minced garlic, diced tomatoes…

…and Chili Con Carne seasoning.

I plated both stir-fries along with a handful of salad greens, pickled turnips, and homemade guacamole.

(If you’re wondering why I haven’t been posting about my snacks, it’s because I’m secretly ashamed about the ridiculous amounts of coconut and macadamia nuts I’ve been gorging on. I’m gonna lay off both for a couple week and let’s hope I don’t go cuckoo for coco and nuts.)
