The Double-Os spent the night at my parents’ house, but that didn’t mean I got to sleep in. My hubby and I had a morning business meeting to attend, so we hopped in the car as soon as I could make myself (somewhat) presentable. With no time for breakfast, I just grabbed a handful of macadamia nuts and a package of Paleo Jerky from Itsumo Ahi Tuna Jerky on my way out the door.

When we finally got home, it was lunchtime, so I shredded some leftover spatchcocked chicken…

 …and assembled lettuce wraps…

…topped with smashed avocado…

 …and cherry tomatoes.

After Fitbomb left for work, I picked up the kiddos and we spent the rest of the afternoon relaxing(!) at home. In my downtime, I made a pot of quick pressure cooker bone broth with the frozen chicken bones I’d been collecting in the icebox.

Bone broth is good stuff, and something I need to make more often.

For dinner, I roasted green beans in the oven – and yes, green beans are fine by me (and Robb Wolf, Mark Sisson, Sarah Fragoso, Whole9, etc.)…

…and made a quick garbage stir-fry with marinated chicken thighs…

…peeled, thinly-sliced onions…

…rehydrated dried shiitake mushrooms…

…and baby kale.

Once the stir-fry was finished…

…so were the green beans.
