Guess who’s feeling much better?

One week out from his tonsillectomy and Big-O is pretty much back to his normal self. That makes heading in to work every night much less stressful. Phew.

While I was at working my penultimate graveyard shift of the week at the hospital, I chugged a Thermos of bone broth and gobbled up a box of leftover sous vide steak, grilled eggplant, and stir-fried spinach.

Roasted eggplant tastes even better as cold leftovers – the skin softens and each bite melts in your mouth. (Don’t worry: I’ll post the recipe once I finish writing it up.)

When I returned to the Nombomb cave in the morning, my stomach was growling. I filled a plate with wild salmon lox, avocado, and kimchee and gobbled it up before hitting the sack.

After spending the day unconscious in bed, I staggered to the kitchen and announced that we were having dinner at Asian Box. Lil-O quickly ran to put on his bow tie, and then we headed out.

I ordered my usual: lemongrass marinated pork over steamed veggies and Asian slaw topped with sriracha…

…and my hubby got the same but with a side of Hot Box sauce instead of the sriracha.

We all gobbled up our boxes outside…

…and chatted about what everyone did while I was snoozing.
