I’m back and somewhat refreshed from my mini blogging vacay. Last night, I read another giggle-inducing chapter from Andy Cohen’s best-seller, Most Talkative, and snoozed for a solid 8 hours. I even woke up before the Double-Os – which never happens.

This morning, I gobbled up a frittata filled with leftover broiled asparagus and carnitas…

…and downed two mugs of bone broth before working at Lil-O’s preschool for the last time. It was a bittersweet morning filled with a charming teddy bear picnic, sand play, and sunshine. I’ll relish having more free time next year but I’ll miss hanging out with the kids and the selfless teachers at the co-op. 

At lunchtime, I came back to our dusty house to fry up some meat and veggies. Construction is finally starting next week and I’m trying to get in as much cooking as possible before the kitchen is off-limits.

I grabbed a package of ground Lava Lake Lamb…

…stir-fried it with leftover green marinade

…sauteed baby kale & chard…

…pan-seared a portobello mushroom…

…and piled everything on a plate.

By the time I finished cleaning up the mess, it was time to pick up the Double-Os from school. 

When it was time for supper, I made a big batch of Asian umami mini meatballs (a modification of Graeme’s WODs) where I omitted the egg and and added shiitake mushrooms, Red Boat Fish Sauce, and cilantro. 

While the meatballs baked in the oven…

…I stir-fried a bunch of rapini in melted butter.
