Before I show you my eats for the day, I want to share with you another cool giveaway on the interwebs: My buddies, Bill and Hayley, have paired up with KitchenAid to give away a gorgeous stand mixer! Check out the deets by clicking here. And don’t forget – you’ve still got time to get in on my l’il giveaway right here.

My night at the hospital passed by quickly because the work was constant and uncomplicated – just how I like it. While I was at work, I chowed down on the spinach and chicken salad I picked up at Steak Out and a Coconut PaleoKit.

When I returned to the hotel in the morning, it was a MAD rush to get Big-O to school on time because there was homework to finish…

…and hidden children to seek.

I can’t wait until we’re permanently back at home because being late for everything all the time ain’t so cool anymore. Seriously.

After I dropped Big-O off at school, I went back to our torn-up pad and crashed for the day.

In the evening, I drove back to the hotel and begrudgingly made dinner for everyone. Yes, dinner prep can be an unwelcome chore – especially after I’ve worked five night shifts in a row and still have two more to go. I didn’t want to cook but I just sucked it up like a big girl.

For dinner, I seasoned two bunches of aparagus and stuck them under the broiler..

. …fried up some mini sliders…

…and made a quick veggie stir-fry with shiitake mushrooms…

…onions…

…peeled carrots…

…and nuked sugar snap peas.

Your eyes do not deceive you: Those are SUGAR SNAP PEAS that I quickly steamed in the MICROWAVE OVEN. I’m sure some of you just collapsed in shock.

[No angry comments, please. Sugar snap peas/green beans (and microwaving) are fine per Robb Wolf, Whole9, and Mark Sisson. Take it up with them if you don’t agree – they’re much smarter than me.]

Here’s my dinner plate:

Wanna see a cool present I got from my buddy? She came back from Italy and gifted us with some coffee…

…and a cool stove-top espresso maker.

I so needed a cup before leaving the house. Thanks, Shiraaz!

About Michelle Tam

Hello! My name is Michelle Tam, and I love to eat. I think about food all the time. It borders on obsession. I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.
