Ack! Or should I say, “Hack!”? I was coughing my head off last night and as a result, getting up this  morning was a Herculean task. I finally dragged my disheveled self out of bed because I was scheduled to work in Lil-O’s classroom. Don’t fret! I’m not contagious anymore even though I sound like it.

Before heading to the preschool, I inhaled a bowl of leftover seasoned ground beef, spicy braised kale, and sauteed mushrooms.

When I came home at lunchtime, I ate a plate of leftover chorizo scramble, roasted Pan di Zucchero

…a few spoonfuls of coconut butter, and a Clementine tangerine.

For snack, I nuked a Japanese yam and gulped it down with some coconut flakes.

At dinnertime, I fried up some Burger Bites…

…sauteed mushrooms, onions, and baby spinach in the remaining burger grease…

…and roasted a tray of curried cauliflower.

Here’s my dinner plate:

Fitbomb and I have a deadline we’ve gotta meet for our “side project” so I gotta vámonos.

Good night, gentle readers!

About Michelle Tam

Hello! My name is Michelle Tam, and I love to eat. I think about food all the time. It borders on obsession. I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.
