Today really felt like Monday, in a sad Carpenters’ song kind of way.

Everybody woke up groggy and I had tons of chores to do before I start work on Wednesday night. Damn you, vacation! It’s almost better not knowing what rest and relaxation really feel like…

In the morning, I gulped down a spinach omelet before hustling Big-O to school.

For lunch, I threw together a quick salad with greens, Applegate Farms organic roast beef, julienned carrot sticks, canned roasted bell peppers, balsamic vinegar, and extra virgin olive oil.

In the late afternoon, I caught up with Dr. HA and R while the the Double-O’s reunited with their good buds, I & D. 

For dinner, Dr. HA brought over a comforting, curried butternut squash soup….

…which I served with roasted broccoli and garlic…

…and crab, avocado, and cucumber rolls.

I love when my day ends better than when it began.
