Who’s ready for another Paleo lunch idea? (If you missed yesterday’s box, read all about it, and also check out last year’s five-part series of packed lunches I made with Jackie Linder of LunchBots!).
In today’s LunchBots Duo, we’re packing breakfast for lunch: Prosciutto & Egg Roll-Ups, Mini Cinnamon Apple Scone, and Mixed Fruit Salad.
I know what you’re thinking: cold eggs?!? But these simple omelets make great wrappers, and they’re pretty darn good at room temp or cold. (I place an ice pack under my kids’ LunchBots.) In fact, Lil-O insists on eating his eggs cold, tamago-style (but sans sugar, soy, mirin, etc.).
Silverware is optional, but your fruit salad should really be portioned into a silicone cup or a separate compartment to prevent any juices from running into the rest of your food. I know it all ends up in the same place eventually, but I HATE soggy food.
Wanna see how easy it is to put this lunch together?
For the Prosciutto & Egg Roll-Ups, whisk an egg or two with some salt or fish sauce.
Melt some butter or your favorite cooking fat in a small cast iron skillet over high heat. (I always have a well-seasoned cast iron skillet at hand!) Pour in enough egg to coat the bottom of the pan and immediately decrease the temperature to low. As soon as the egg sets, flip it over and cook for another 30 seconds.
Transfer the egg omelet to a plate. Top it with a few slices of prosciutto (or your favorite deli meat, if prosciutto’s not your thing)…
…and then roll it up. I cut the rolls in half and secure them with toothpicks before packing them.
As a sweet treat, you can bake a batch of mini Cinnamon Apple Scones ahead of time. The recipe’s in my iPad app; just modify the recipe by forming two small rounds instead of one.

Feel free to experiment with different add-ins and flavors. Both variations are a hit in my household. See?
If you don’t have time to bake—and who does in the morning?—just add more fruit, throw in a little container of Paleo Trail Mix, or a cup of applesauce.
Final step: eat it up!
Remember: you can choose your own adventure and modify any of the components to fit your taste and items in your larder. Don’t be afraid to mix ‘n match! Your packed lunch doesn’t have to be perfect; it’ll still be better than the alternative. And don’t let a missing ingredient or two be an excuse for turning to processed, pre-packed Frankenfoods!
