I’m baaack…did you miss me?

This morning, I was rushing to get out the door so I made a super quick scramble with pastured eggs and leftover stir-fried lamb shoulder and veggies. If you’re ever in doubt about what to eat, just reheat leftovers in a cast iron skillet and toss in an egg or two.

When I came home from working at Lil-O’s preschool co-op, I threw together a simple yet satisfying Japanese-inspired lunch. I sauteed shallots and garlic in melted butter…

…and tossed in fresh baby spinach.

Then, I layered on sliced sous vide chicken breast…

…avocado, and SeaSnax SeaSprinkles

I’m a big fan of furikake but it’s normally made with MSG and sugar. SeaSnax Sea Sprinkles do contain a little agave syrup (agave = sugar) but it hits the spot when I have a hankering for sweet and savory nori and toasted sesame seeds. 

After spending the afternoon shuttling the Double-O’s around town, I came home in the evening and made supper. I prepped a tray of roasted broccoli and bacon in the oven…

…followed by a tray of roasted kabocha squash

…and fried some mini sliders with Lava Lake ground lamb and Penzeys Adobo seasoning.
