If you’re feeling grouchy, I get it. You miss pasta. And toast. And diet soda. And chips. And milk in your coffee. And you kind of want to punch somebody. I hear you, and I’ve been there. I didn’t punch anyone, though, because like Ringo Starr, I believe in PEACE AND LOVE, PEACE AND LOVE.

Still, if you’re down in the dumps, I have a feeling I can turn that frown upside down with this Whole30 Day 3 recipe: Instant Pot Ground Beef Chili!

Whole30 Day 3: Ground Beef Chili by Michelle Tam / Nom Nom Paleo https://nomnompaleo.com

This is probably my all-time favorite easy chili recipe, using commonplace ingredients that are usually already in my kitchen. The flavors I can coax out of this dish, though, are anything but common.

INSTANT POT VERSION:

I get high-fives from my family whenever I make this rich, meaty concoction, and it’s a breeze to make, too—especially if you have an Instant Pot. In fact, my original recipe calls for an Instant Pot, and you can check it out here.

No Instant Pot? No problem. You can just make it on the stove or in a slow cooker!

STOVETOP VERSION:

To make my Ground Beef Chili on the stovetop, just follow the same instructions as presented in my Instant Pot Ground Beef Chili recipe, EXCEPT:

  • Instead of using ½ cup chicken broth or bone broth, use 1 cup; and
  • Instead of cooking it under pressure, simmer it in a partially-covered stockpot or Dutch oven over medium-low heat for 1 hour or until the flavors meld.

SLOW COOKER VERSION:

Prefer to make it in a slow cooker? Then refer to the instructions in my Instant Pot Ground Beef Chili Recipe, EXCEPT:

  • Do all the sautéing in a pot on the stove before transferring everything to the slow cooker.
  • Set the slow cooker on low and cook for 6-8 hours.

No matter what method you choose, I recommend making extra if you can. That way, you’ll have plenty to freeze or refrigerate for later. After all, you never know when you’ll need some emergency food, and this Ground Beef Chili is perfect for topping spaghetti squash or stuffing into an omelet!

  1. This was so good! Until this recipe I had yet to find a paleo/Whole30 chili that I actually liked. This was perfection and the flavors were amazing! Day 3 of the Whole30 in the books!

  3. If I’m using a slow cooker, am I sautéing everything in a pan until I reach the part where you change the setting on the instant pot? So up until I’m mixing the tomatoes in? Or is it just the veggies that get sauteed and then I can throw everything into the slow cooker and mix it together and set it?

  4. Good chili. Of course I added more garlic. More cumin. More spices all the way around. Next batch, and there will be another batch, I am going to at least double the amount of red/yellow/orange peppers, diced tomatoes and onions. Wow this is three days in a row with your wonderful paleo recipes. On a roll! [made mine in an InstantPot]

  5. I made this last night to have for dinner tonight. It tasted so good, I had to have a taste. I can’t wait to go home and have dinner tonight! I added extra onion and bell pepper, next time I will add even more. I did the stove top method.
