Looking for Nom Nom Paleo Whole30 chicken breast recipes? Tough to find, right? To be honest, there aren’t that many chicken breast recipes here because I’m partial to cooking with chicken thighs. I find that chicken thighs are more forgiving if you happen to overcook them, and they’re more naturally flavorful.

Still, I know that many of you love cooking and eating chicken breasts, and have a bunch of them stashed in your freezers. In response to your prodding and requests (e.g. “Can you use chicken breast in this recipe?”), I’ll  occasionally test my chicken recipes using breasts to see if they work. And once in a blue moon, I even end up creating chicken breast recipes that meet or exceed the standards I set for my chicken thigh recipes!

So without further ado, I present to you two lip-smacking Whole30 chicken breast recipes that rival Ollie’s Cracklin’ Chicken for deliciousness!

My Favorite Whole30 Chicken Breast Recipes

Chicken Prosciutto Involtini:

This Whole30-friendly Chicken Prosciutto Involtini recipe easily turns plain boneless, skinless chicken breast into a fabulous dish that’s fit for impressing company! By slathering the flattened breasts with an Italian-inspired seasoned mayonnaise, you can amp up the flavors of the chicken breasts and keep ’em juicy. Wrap each stuffed breast in a cozy prosciutto blanket before popping them in a hot oven, and prepare to be amazed.

Ginger-Scallion Chicken:
