Paleo Eats: 9/7/11

My week off is over already? Harumph!

Since I was returning to work tonight, I spent the morning grocery shopping and prepping dinner. But before Lil-O and I hit up Whole Paycheck, I made myself a quick breakfast of leftover roast veggies and a 4505 Meats’ bacon-stuffed hot dog. I like these wieners a lot and now you can have them shipped to your home! 

After returning from the store, I threw a tray of World’s Best Braised Cabbage into the oven…

…and tossed three pounds of chicken thighs with Damn Fine Chicken marinade (it’s orange-hued because I used virgin red palm oil as the fat).

Then, I made a super quick lunch for me and Lil-O: fried Applegate Farms’ chicken apple sausage and sauteed spinach and shallots.

After I picked Big-O up from school, I went to bed for a couple hours in the afternoon.

I woke up at 5:00 p.m. and while I rubbed the sleep from my eyes, I put a tray of Damn Fine Chicken in the oven…

…stir-fried spigarello and bacon…

…and reheated the braised cabbage in the microwave.

By the time the veggies were done, the thighs were finished roasting in the oven.

After we ate dinner, Fitbomb and I tucked the kids into bed. I seasoned a few goat shanks with salt and pepper before storing them in the fridge overnight.

I’m not exactly sure how I’ll cook the shanks but I do know it’ll involve the slow cooker.

I was still really sore from yesterday’s WOD so I just rowed a 1K on the erg before leaving for work. Man, I gotta get used to my zombie hours again!
