Paleo Eats: 4/26/12

When the Nombomb household woke up this morning, we were surprised and delighted that people Down Under were already downloading the Nom Nom Paleo iPad app since it was Friday there.

Unfortunately, we also discovered that optimizing the app for the retina display on the newest iPad made it not work properly on first generation iPads.

D’oh!

Our developers are working to solve the issue but our app might require too much memory for that version. Yep, that’s the sound of me exhaling deeply.

Despite being giddy about our app launch, I still had all my regular mommy duties to tackle. Before my participating parent shift at Lil-O’s preschool, I made everyone a simple breakfast of bacon, hard-boiled eggs, and strawberries.

When I returned to our dusty house in the afternoon, I seasoned a couple of skirt steaks that I butchered and portioned on Sunday and seared them quickly in bacon grease.

While the steaks rested, I chopped up a cabbage and stir-fried it with some Red Boat Fish Sauce in the “dirty” cast iron skillet.

Here’s my lunch plate:

Some of you might think the steak looks really rare…

…and you’re right, but that’s how I like to eat it. Besides, I know exactly how the meat was handled during processing.

I spent the afternoon shuttling the kids around town and also picked up my weekly vegetable CSA haul from Mariquita Farm.

We were checking into our new digs after dinner so while the kids watched T.V. in the garage, I roasted a tray of baby artichokes tossed in bacon grease, salt, and pepper…

…formed and fried a bunch of mini sliders…

…and stir-fried chard in the burger grease.

We crammed ourselves around the kiddie table in the garage and ate supper.
