Man, oh man, it’s been BUSY at the hospital! Wash your hands and take your vitamin D everyone!

I barely had time to eat my packed lunch (a leftover 4505 Meats apple breakfast sausage and sauteed cabbage) before getting the heck out of dodge.

When I got home, I made up for lost chow by eating leftover kabobs, collards and bacon

…gobs of coconut flakes, and a frozen PaleoKrunch bar. Yes, I ate all of it. I had a testy exchange with an arrogant vascular surgery resident before I came home (I won by the way) so I stuffed my face ‘cause I was HANGRY.

While I slept the day away, Fitbomb picked up our Siren SeaSA haul for the week (two pounds of live mussels)…

…and took the Double-O’s to The Spirit Store to pick out Halloween costumes.

Um, can you tell Lil-O is kind of obsessed with Ninjago?

Dinner was super easy tonight because Mr. Mom also assembled my mise en place before I dragged myself out of bed.

He prepped some taters for baked sweet potato fries

…and cleaned the mussels.

All I had to do was toss the yams with coconut oil and stick them in the oven…

…assemble a quick salad…

…and cook a pot of Thai steamed mussels.

After we tucked the boys in bed, I actually went back to bed for a quick catnap before heading to work.

Only four more nights to go!

About Michelle Tam

Hello! My name is Michelle Tam, and I love to eat. I think about food all the time. It borders on obsession. I’ve always loved the sights and smells of the kitchen. My mother was (and is) an excellent cook, and as a kid, I was her little shadow as she prepared supper each night. From her, I gained a deep, abiding love for magically transforming pantry items into mouth-watering family meals.
