I’m a bit obsessive about testing and re-testing my recipes, so before heading out the door this morning, I tried out my recipe for Uova in Purgatorio one more time to see if my latest tweaks pass muster.

After fueling up, I hopped in my car with Cheryl Sternman Rule to meet up with Irvin Lin in San Francisco so we could chat over coffee about blogging and social media.

I was eager to pick both of my blogging buddies’ noggins ‘cause both Cheryl and Irvin write award-winning blogs filled with witty prose and purty pictures. I ADORE their sites. Alas, they’re not Paleo eaters (yet!), but then again, most of my friends aren’t.

We spent over two hours gabbing, laughing, and sharing tips. I was sad to be the partypooper who had to break up our mutual brain-dumping session so I could head back to the ‘burbs to pick up my kids. 

By the time I got home, I only had a 15 minutes to make and eat lunch before retrieving Big-O from school. Luckily, I had leftover West Lake soup in the fridge that I quickly reheated and downed before hightailing it out the door again.

The rest of the afternoon was spent at our local kung fu studio, where the Double-Os are training to be Hong Kong action stars like Henry’s high school buddy, Daniel Wu (who – no joke – moved to Asia after college and became a bonafide movie star/director/producer).

After a long day, the last thing I wanted to do was make dinner. Luckily, I had a bunch of leftovers and easy to prepare vegetables in the fridge and I had no excuse not to cook.

For our supper, I seared a small hanger steak seasoned with salt and pepper and crisped up the last of our leftover lamb shoulder…

…roasted a tray of Curried Cauliflower

fried up a bunch of cooked organic potatoes

…and sautéed fresh spinach with a splash of fish sauce.

In the end, I’m always glad I whipped up my own food. How do you stay motivated to get in the kitchen and cook?
