Hardcore Albacore (Broiled Bacon-Wrapped Tuna Medallions)

- 1 pound tuna albacore loin skinless
- ¼ cup freshly squeezed orange juice
- ¼ cup coconut aminos
- 1 tablespoon balsamic vinegar
- ½ teaspoon Red Boat fish sauce
- ¼ teaspoon Freshly ground black pepper
- ½ teaspoon Aleppo pepper (optional)
- 2 slices bacon thin-cut
Preheat the broiler on high and arrange the oven rack six inches from the heating element.
Cut the tuna loin crosswise, into five mini steaks, about 1.5-inch thick. Place them in a large bowl.
In a measuring cup, whisk the orange juice, coconut aminos, vinegar, fish sauce, black pepper, and Aleppo pepper. Pour the marinade over the fish and marinate for 15 minutes.
Place the bacon on a microwave-safe plate lined with four sheets of paper towel and cover with two sheets. Microwave the bacon on high for 1-2 minutes so it is cooked halfway but still pliable.
Wrap each marinated tuna medallion in a slice of par-cooked bacon (with the ends tucked under the fish) and place them on a rack on top of a foil-lined baking tray.
Broil the bacon-wrapped tuna for about 4 minutes on one side and flip them over and cook them for an additional 2 minutes (or until bacon is crispy). Serve immediately.
