Paleo Eats: 10/27/11

Early this morning, Lil-O woke me up with a start when he started wailing outside our bedroom door that he had to go to the bathroom RIGHT NOW. When I bolted out of bed to meet him in the bathroom, I slipped in his puddle of pee in the hallway and banged my ankle into the step stool.

Man, did I need my espresso aujourd’hui.

After I brewed myself some java, I ate some leftover sous vide pork tenderloin, roasted tomatoes, broccoli and bacon, and mashed cauliflower.

My sister was in town for a few days so I met her for lunch at Tootsie’s, where I ate a short rib sandwich sans bun with a side salad.

At dinnertime, we tag-teamed cooking duties. It’s so much fun being in the kitchen with my sister ‘cause:

  1. She’s got mad chef skillz and I learn a ton by observing and peppering her with questions.
  2. I never do the heavy lifting because she always makes the main course.
  3. Without fail, she makes us a big batch of whatever she’s cooking so we end up with lots of yummy leftovers.

Tonight, my sister made a delicious Thai green curry with chicken thighs, red peppers, and butternut squash using a tasty green curry paste by Pa-Siam.

Definitely try to find this brand if you can – it’s fantastic and the ingredients (if they’re listed accurately) are Paleo-friendly.

Meanwhile, I oven-roasted a tray of San Marzano tomatoes (300F for 2 hours)…

…pulsed orange, purple, and white mini cauliflowers in my Cuisinart…

…and stir-fried a tri-colored Asian cauliflower fried rice with bacon, eggs, and mushrooms.

Here’s my dinner plate:

I’m so sad my sister is driving back home tomorrow. Boo.
