Paleo Eats: 5/25/11

Last night of work! I was beginning to think it would never come…

For my first meal of the shift, I downed some leftover spigarello and shredded carrot stir-fry mixed with roasted chicken. 

Later, I ate a package of spicy grass fed jerky chews.

And for my last meal at work, I had some leftover braised thai green curry and green beans.

After my shift ended, I had two hours to kill at the hospital before I had to meet my mother-in-law for her oncology appointment. I dragged myself to my car, reclined the seat and tried to conk out for a nap, but no luck. My paranoia kept me awake; I kept imagining that passers-by would think I was: (1) a homeless person who lived in her car; (2) dead; or (3) both. Plus, the sun was too damn bright. It needs a dimmer switch, I tell you.

At the oncology appointment, the docs and I FINALLY convinced my MIL that she needs to consume more meat to keep her blood counts and energy levels high. I’d like to think it was my super-persuasive arguments and powers of logic — but in reality, I think I guilted her into it because I broke down crying out of sheer exhaustion and frustration. Classy, I know.

Never underestimate the power of a grown woman’s sobs.

After the appointment, I drove home and ate a small Primal Pac before diving headfirst into bed for a short catnap.

When I woke up, I groggily made myself a couple of chicken lettuce tacos with leftover roast chicken tossed with Primavera salsa and topped with store-bought guacamole.

Then, I spent the rest of the afternoon shuttling the kids between kung fu practice and the final T-ball game of the season.

I was too tired to make dinner in the evening, so hubby picked up take-out at Anatolian Kitchen.

We split an order of babaganoush…

…and a mixed combo grill (extra veggies, no rice).

I can’t wait for the day to end. Time to get some sleep! 

Paleo Eats: 5/13/11

I may be coming down with a cold (oh noes!) so this post will be short and sweet. Making Kleenex-wrapped booger wontons with Lil-O and going balls to the wall in today’s WOD at CrossFit Palo Alto may have a little something to do with it.

For breakfast, I ate leftover Damn Fine chicken along with cauliflower and carrot puree and nuked sugar snap peas.

I also had a tablespoon of coconut butter for good measure.

After my CrossFit class, I ate my usual post workout meal: baked yam and Applegate Farms organic roast beef.

At lunchtime, I brought some takeout from Anatolian Kitchen to my buddy H’s house. We shared a combo grill plate (it’s definitely enough meat for two people to share)…

…and she ladled us bowls of her delicious curried cream of carrot soup. I’m gonna steal her recipe and post it soon.

In the afternoon, I snacked on lots of coconut flakes and a packet of spicy grass fed jerky chews.

For dinner, I threw a packet of Grimaud Farms duck confit into the SousVide Supreme and roasted some carrots in the toaster oven. About 35 minutes later, both were ready to eat so I seared the duck legs in some duck fat…

…and sautéed some spinach and shallots in the “dirty” pan.

I drizzled some balsamic vinegar on the carrots and spinach and called it a day.

I love the new splatter screen I bought! Normally, my stovetop looks like an oil slick after I fry stuff but tonight there was nary a drop. Plus, it can go straight in the dishwasher. Win-win!

Paleo Eats: 4/11/11

Today officially marks the beginning of Big-O’s Spring Break and it’s nice not having to rush, rush, rush in the morning. We don’t have any grand travel plans — just train trips to the Big City to meet Fitbomb for dinner and hanging out at the neighborhood park. I hope this week inches by at a snail’s pace.

For today’s breakfast, I nuked the last of the leftover grass fed beef shank and cabbage stew and ate it with leftover broiled asparagus and zucchini.

After hanging out at Big O’s friend’s house for a playdate, we met up with one of my buddies for a picnic in the park. She was kind enough to bring us take-out from Back A Yard a tasty, tasty Carribean restaurant. Truth be told, I told her where to pick up lunch and what she should order. I’m not a demanding bitch, I’m just trying not to be passive aggressive. Don’t you wanna be my friend, too?

I ate a Carribean Cobb Salad with Jerk chicken…

…that potentially had some sort of sugar and crap oil in the marinade but I scarfed it all down ‘cause it’s yummy to my tummy.

My measly contribution to lunch was a strawberry and Asian pear salad.

My afternoon snack was a can of sardines and a pile of leftover roasted peppers.

The macadamia nuts, coconut flakes, and coconut butter in the pantry were super tempting but I was able to resist them today.

At suppertime, I made a garbage frittata with all the little ramekins of leftovers I’d been collecting in the fridge. I sautéed some leftover onions and cilantro in butter and added a chopped and seeded tomato.

Then, I threw in leftover emergency protein, sautéed mushrooms, and spinach. I whipped up 4 jumbo eggs with some salt, pepper, and a dollop of Greek yogurt and dumped it in. I popped the skillet in the toaster oven and fifteen minutes later, the frittata was cooked through with a golden crust.

I also roasted a tray of Brussels sprouts with bacon

…and nuked the leftover fajita vegetables.

The garbage frittata was really yummy. I was dubious at first because the filling looked like cat food but it ended up being delicious. Note to self: keep every last scrap of leftovers. Yes, I’ve accepted that I’m turning into my mother.

I detest the Bangles’ song, Manic Monday, but I do agree that Sunday is my fun day. I apologize in advance if that shitty song gets stuck in your head all day.

Before leaving the house, I nuked the last piece of Porktastic Spinach and Mushroom Meatloaf and ate it with some leftover roasted peppers.

Coincidentally, my meatloaf recipe is the meal of the day over at The Foodee Project!

We met up with Fit Daffy at the Mountain View Farmers’ market where I picked up my free asparagus

…eggs, fruit, and veggies.

I’m not a girl who appreciates flowers (I’d rather get a box o’ bacon) but these Gerbera daisies sure are purty.

For lunch, we drove to the East Bay to hang out with Fitbomb’s family. We brought over un-Paleo dim sum take-out from Koi Garden to appease the elders and a couple kebab platters from Pamir restaurant for hubs and myself. Fitbomb and I both hate dim sum but it’s hard to pass up a few slices of roasted suckling pig.

At dinnertime, I stir-fried some fajita vegetables (bell peppers, cremini mushrooms, onions, garlic, Arizona Dreaming, salt, and pepper)…

…and finished it with a squeeze of lime juice.

I also made some emergency protein with grass fed ground beef sautéed with onions, minced garlic, diced tomatoes…

…and Chili Con Carne seasoning.

I plated both stir-fries along with a handful of salad greens, pickled turnips, and homemade guacamole.

(If you’re wondering why I haven’t been posting about my snacks, it’s because I’m secretly ashamed about the ridiculous amounts of coconut and macadamia nuts I’ve been gorging on. I’m gonna lay off both for a couple week and let’s hope I don’t go cuckoo for coco and nuts.)

Paleo Eats: 3/31/11

I had a busy, busy day and I’m still a little wonky from lack of sleep so this post will be short and sweet.

For breakfast, I fried up two eggs in butter and sprinkled on Fines Herbes seasoning. I ate them with leftover roasted butternut squash, roasted curried cauliflower, and nuked frozen broccoli.

 

After attending Little-O’s gym class and grocery shopping at Whole Paycheck, I came home and whipped up a dozen mini frittata muffins with the “emergency protein” from last night.

This time, I placed the silicone baking cups in a muffin tin but I don’t like how all of the muffins have dents.

I’m gonna just place them on a lined baking sheet next time.

For lunch, I ate three mini frittata muffins along with braised escarole and shallots.

I also gobbled up a couple slices of deli roast beef and a handful of baby carrots.

After lunch, I went with my mother-in-law to a couple more oncology appointments and on our way home I picked up my vegetable CSA box from Mariquita Farm.

By the time we got home, it was time to take Big-O to his first official T-ball game (the last two were rained out). Before dashing out the door, I seasoned six pork chops (my half hog came with a plethora of chops) with salt and pepper, vacuum sealed them, and dropped them in the SousVide Supreme (set at 135 F).

Although I had grand plans of making sous vide pork chops for dinner, we ended up getting take out from Anatolian Kitchen.

 

After dinner, I iced the sous vide pork chops and stored a couple in the fridge and the rest in the freezer. Also, I ate a shitload of coconut flakes for no good reason.

Paleo Eats: 2/27/11

Another day of eats coming right up…

Tonight at work, my first meal of the shift was leftover tandoori chicken, sautéed spinach and bacon, and garlic cauliflower mashed potatoes.

At snack time, I threw down some leftover curried cream of broccoli soup with sous vide chicken breast.

My final meal at work this morning? A box of chili con carne-seasoned ground beef with roasted carrots and celery root and stir-fried collard greens and bacon.

After my shift was over, I drove over to the Mountain View Farmers’ Market with the boys and spent a mess of money. I didn’t need any more veggies (I’d picked up two different vegetable CSA boxes this week), but I wanted to stock up on meat, fish, and strawberries.

When we got home, I threw a bunch of pastured beef bones and aromatics into the slow cooker to simmer a pot of beef broth while I slept.

(I’ll post a recipe later this week if it turns out to be successful.)

Then, I gobbled a few squares of dark chocolate (it is an “S” day after all), downed my vitamins, and hit the sack.

When I woke up close to 6:00 p.m., my hubby had already left to pick up some kabobs for dinner from House of Kabobs. This time we ordered a bunch of skewers a la carte.

In the meantime, I got busy preparing side dishes. I roasted some broccoli tossed with avocado oil, salt, and pepper (convection roast 375 F for ~25 minutes)…

 …and wilted some Castelfranco radicchio and shallots.

After boxing up the leftovers and putting the kids to bed, I strained the beef broth and stuck it in the fridge for later. Then, I packed my grub for work and left the house. Only three more nights of work!

Paleo Eats: 2/26/11

I’m barely at the halfway mark of my workweek and I’m dragging a bit. Yes, it’s probably due to the fact that I went to a class at CrossFit Palo Alto  after my nightshift instead of catching some zzzz’s. A long, intense WOD combined with bright sunlight shining in my eyes (decreased melatonin) on the drive home is not conducive to good sleep. Whatever. I had a great time in class and I’ll do it do again.

On night three of work, I ate the same chow as I did the night before. It pays off to have lots of leftovers!

My first meal of the night was a box of leftover grass fed T-bone steak, winter squash puree, sauteed mushrooms, and roasted Brussels sprouts with bacon

…followed a few hours later with a snack of leftover mini frittata muffins

…and capped off with my “dinner” of Chili Con Carne seasoned grass fed ground beef, cauliflower fried rice, and roasted asparagus.

On my way home from work, I picked up my weekly veggie CSA box.

For once I was glad the contents were skimpy because my fridge was already stuffed with veggies from my Mariquita Farms “mystery box” and from going to the store earlier in the week.

At home, I opened up a couple packages from Amazon and was happy to find a bunch ‘o fats…

…but mad to discover that I’d mistakenly ordered a big ass box of finely shredded coconut instead of coconut flakes.

Argh. Serves me right for groggily (and recklessly) ordering stuff online in the middle of the night. That was good reminder that I needed to go to sleep right away. But before I hit the hay, I seasoned a small pork shoulder roast with Chili Con Carne seasoning, salt, and pepper and stored it in a Ziploc bag in the fridge to roast off later in the week.

When I woke up at 5:30 p.m., I felt well-rested and refreshed. Although I’ve been working graveyard shift for almost a decade, it still takes me a few days to get back into the groove of things.

I was too tired in the morning to defrost any meat so I sent my hubby to Calafia to pick up a rotisserie chicken…

…while I roasted a tray of carrots and celery root

…and stir-fried collard greens with bacon and shallots.

I know I’ve been making this dish a lot but the combination of greens, bacon, shallots, and vinegar is too tasty to try something different.

After dinner, I helped put the kids to bed and then I practiced some power cleans in the garage My form is really ugly but I’m working on it, ‘kay? When the clock struck 9:20 p.m.,  I got my crap together and went to work.

Paleo Eats: 2/18/11

Today was insanely busy, and I’m glad I had some hearty Paleo eats to power me through to the end.

The first activity on my morning docket was the women’s class at CrossFit Palo Alto, so about an hour before my workout, I made myself a quick and easy scramble with three eggs and leftover stir-fried kale and bacon.

See? I don’t always make myself a frittata. Scrambles are a lot quicker when I’m short on time.

After class, I came home and snacked on macadamia nuts and coconut flakes. Then, I accompanied my mother-in-law to her pre-op anesthesia appointment at the hospital. On our way home, we stopped by Calafia and picked up a rotisserie free-range chicken, which I shredded up to make salads with greens, carrots, and sugar snap peas. I dressed our salads with balsamic vinegar and extra virgin olive oil.

At dinnertime, I stir-fried some ground pork with a diced onion, four minced garlic cloves, ½ a pound of sliced cremini mushrooms, Arizona Dreaming seasoning, salt, and pepper.

I served the seasoned swine with roasted bell peppers and roasted curried cauliflower.

That’s all, folks! I gotta catch some zzz’s so I’ll be bright-eyed and bushy-tailed for the Whole9 Nutrition Seminar at CrossFit Palo Alto tomorrow morning. Can’t wait to meet more members of the gym and share some Paleo treats!

Paleo Take Out: Rose International Market (Mountain View, CA)

We’re throwing a birthday party for our kindergartner this Sunday, so I fought the crowds at Costco to get some supplies. Truth be told, he’s requested pizza for his party, so we ain’t throwing a 100% Paleo birthday bash for our son. It won’t be a complete carb-fest, though. I’m sous viding some flank steak and chicken breasts to serve along with stuff to make your own Cobb salad (e.g. salad greens, crumbled bacon, diced avocados, tomatoes, cucumbers, crumbled blue cheese, and goat cheese).

After my Costco run, despite having grilled meat on sticks two nights in a row, I still had a hankering for more. So I made a pitstop at Rose International Market, a family-run Mediterranean market that also serves grilled kabobs from a small window out back by its parking lot. Sound sketchy? Whatevs. The kabobs are cheap and tasty.

I was really hungry so I ordered 5 kabobs: 2 koobideh and 1 each of chicken, lamb hearts…

…and mixed veggies.

Each order comes with some lavosh and a bag filled with herbs and a quarter of a raw onion. When I got home, I chucked the raw onion and lavosh and added some herbs, labneh, and cherry tomatoes to my plate.

I ended up eating just half of what I ordered (Fitbomb finished the rest for dinner). The koobideh and chicken were my favorite kabobs. Next time, I’m definitely gonna pass on the mixed veg kabob. The vegetables are of inferior quality and inconsistently cooked — they somehow managed to be charred and raw at the same time. Also, the texture of the lamb heart was a bit on the tough and rubbery side. In the end, these skewered meats aren’t the best I’ve ever had, but this place does satisfy my kabob cravings. And I did mention that it was cheap, right?

Paleo Take Out: Paradise Kabab House (Redwood City, CA)

Fitbomb made me a very happy woman tonight by bringing home some grilled meaty goodness from Paradise Kabab House.  I’d been craving kababs all week and this meant that dinner prep would be minimal.

All the kababs and combos at Paradise Kabab House come with rice or salad so we went with the salad option. It’s easy to go Paleo here! We ordered a small order of Maasto Khiar which is their homemade yogurt with dried mint and diced cucumber (we’re lacto-Paleo) and two combination platters.

We got the Pardees combo with a ground beef Koobideh kabab and chicken thigh kabab…

…and the Shandiz combo with beef filet mignon and chicken thigh kabab.

The salads that came with the combos were kinda skimpy so I roasted some carrots with lard

…roasted some halved delicata squash with lard

…and sautéed some spinach and shallots in lard.

Look at them meats and veggies!
