I know I’ve been incredibly delinquent with my newsletters. My excuse? Each one takes hours to put together from scratch ‘cause I don’t want to just regurgitate my recent posts. (That’s what my RSS feed is for, right?) Plus, I hate spam (of all kinds) as much as the next gal, and I don’t want to clutter up your inbox unless I have something important to say.

So what got me to resurrect my newsletter? The return of a limited number of Nom Nom Paleo socks! Click here for details and ordering instructions.

Paleo Eats: 11/20/12

You know that old saying about how a watched pot (of bone broth) never boils? That’s kinda how I feel about this interminable workweek. Don’t get me wrong: I like my job and my co-workers, but I’m antsy to finish my shifts and relax with my favorite people. My last night of work seems SO. FAR. AWAY. I totally get how Lil-O feels when he complains that Christmas is “infinity days” away.

While I was peddling drugs on my penultimate shift at work, I ate my packed lunch of leftover Oven-Braised Mexican Beef, winter squash purée, and roasted broccoli. And maybe some chocolate, too.

My shift dragged on even longer ‘cause I had to put in some overtime to complete a mandatory competency exam. Oh, well. Can’t complain about getting paid more, right?

When I finally got home in the morning, Big-O was already at school, but the little one was around to lend me a (tiny) hand in the kitchen. The two of us quickly threw together the marinade for Super Easy Tandoori Chicken

… and tossed the seasoned chicken in the fridge before I hit the sack.

In the evening, I plopped the chicken on a tray…

…and stuck it into the oven…

…only to remove it five minutes later because an error code was flashing on the display panel.


My “fixed” oven was inexplicably busted AGAIN. Just in time for Thanksgiving. 

I quickly transferred the chicken to a smaller tray and crammed it in our workhorse of a toaster oven to finish cooking. Luckily, my microwave also doubles as a convection oven, so I was able to roast an acorn squash while the chicken was roasting.

I even had time to stir fry a bag of baby kale as I waited for the chicken and squash to finish browning.

By the time the chicken was ready…

…so were the veggies.

I threw all the dishes on the dining room table…

…and rang the cowbell to assemble the troops.

Two thumbs up! Phew.

And then, I took off for my last night of work for the week. Finally.

Before I sign off, I just wanted to wish you and yours a stress-free and rejuvenating Thanksgiving. I’m thankful for so many things this year — my health, family, and friends. I’m also very grateful for you, dear readers. In fact, I’ve got some fun giveaways in the pipeline AND I even ordered a limited number of Nom Nom Paleo knee socks to offer for sale. See?

Stop making fun of my scrawny legs. I’m workin’ on ‘em, alright?

Just like last year’s edition, these socks are made right here in the U.S.A. by Gumball Poodle, so you know they’re the best knee-highs ever. And for Version 2.0., I’ve updated the font to match my logo, and we have ‘em in both red and yellow.

I’m not a fan of the post office AT ALL, but I’ll personally package, label, and send them out to you if you order them. I’ll try to get the online ordering link up and running in the next day or so — just in time for Black Friday! (Or maybe Cyber Monday if I’m feeling lazy. But definitely before Kwanzaa.)

I recently promised that once the latest version of the app received 100 ratings/reviews, I’d sponsor a giveaway. We’re thrilled that people are enjoying it — including those who are just discovering Paleo through the app.

Even now, more than two months after its launch, Nom Nom Paleo is (inexplicably!) one of Apple’s top paid Lifestyle apps for the iPad.

I don’t care that it’s swimsuit season. For me, it’s always the right time for knee high socks. After all, there’s no better way to protect one’s shins during deadlifts than with awesome unisex socks emblazoned with BACON, MEAT, CHOCOLATE, NERD, and NOM NOM PALEO!

Gumball Poodle makes the best knee highs, hands down. I own all the Paleo-friendly ones — sorry, I don’t do TOFU socks — and I’m such a superfan that I commissioned the company to make NOM NOM PALEO socks. They’re comfy and stay up no matter how crazy the WOD. 

These NOM NOM PALEO socks are no longer available for sale (those suckers sold out in a flash!) but I’ve reserved a few last pairs to give away.
