Paleo Eats: 5/20/11

I’m knee-deep in my workweek so I just have to slog through six more nights.

My first meal at work was some leftover duck confit, winter squash puree, and braised cabbage.

The skin on the duck wasn’t crispy anymore but it was still tasty.

At snack time, I ate a bag of grass fed jerky chews. I know this might sound weird, but because they’re thinly sliced and dry, the chews almost taste like beef chips. Mmmm…beef chips. This tiny bag of protein kept me full until the end of my shift.

The last thing I ate before leaving work was some leftover slow cooker roast chicken, Asian cauliflower fried rice, and roasted broccoli and bacon.

On my way home from work, I stopped at Whole Paycheck to buy a roast chicken for $5.

Every Friday, one item in the store is marked down to a ke-razy low price for the day. Normally, it’s for something lame like cookies or cake so I was psyched that it was a meaty deal today. I swear, the old frugal Chinese woman in me was velly happy with my purchase.

When I got home, I snacked on some Paleo People granola I won from one of Paleo Magazine’s twitter contests. I love winning contests! BTW — subscribe to this magazine if you haven’t already. We gotta support our Paleo peeps!

My kiddos opened up the apple crisp and cacao nut varieties for breakfast so I nibbled samples of both. The texture is a little softer than I expected but the flavors were yummy with just the right amount of sweetness. We all agreed that cacao nut was our favorite flavor.

Then, I hit the sack.

For dinner, I decided to transform some sweet Italian sausage I purchased from Marin Sun Farms (sausage was this month’s CSA deal) into meatballs. Upon closer inspection, I noticed that the ingredients weren’t exactly Paleo — they contained sugar and soybean oil. 

Oh well. I couldn’t waste them so I went ahead and cooked up a platter of  semi-homemade spaghetti and meatballs with zucchini noodles.

To accompany the main course, I roasted curried cauliflower

…and sautéed spinach and minced garlic.

After dinner, I did my own homemade WOD and NOT the one assigned in the class I missed today. Post workout, I ate some chestnuts and Applegate Farms organic roast beef before heading in to work.

Paleo Eats: 5/5/11

I’m back at work for another seven night stretch. Normally, the first night flies by and tonight was no exception.

My first meal at work didn’t happen until 2:00 a.m. and I ate some leftover kebabs from Anatolian kitchen, broiled asparagus, and a small container of strawberries.

The last thing I ate at work was a chicken apple sausage with leftover garlic cauliflower mashed potatoes and steamed mini summer squash.

When I got home, I helped Big-O get ready for school and then I went to bed.

At 5:00 p.m., I woke up, marinated some Portobello mushrooms, and drove Big-O to his T-ball game. When we got back, I reheated the slow cooker lemongrass coconut chicken drumsticks on the stove, roasted the Portobello mushroom packets

…and curried cauliflower in the oven.

I chopped some fresh cilantro…

…that I sprinkled on the chicken…

…and the cauliflower (I also squeezed on some fresh lemon juice).

After dinner, I did Sumo Fran in the garage (modified and very slowly) and ate some deli roast beef and steamed chestnuts as a post workout snack.

Then, it was off to work AGAIN.
