I popped out of bed bright and early this morning because I had a podcast date with Diane, my pal who blogs over at Balanced Bites. In her honor, I reheated a mug of bone broth and fried up a rasher o’ bacon for breakfast.
After throwing together Big-O’s camp lunch and fixing everyone’s breakfast, I roused the rest of the clan and locked myself in the guest room with a telephone so I could gab in peace. I had such a fun time chitchatting with Diane that — before I knew it — 90 minutes had passed. Listen in on our convo here.
The rest of the day was spent running errands and washing mountains of laundry. For lunch, I scrambled some eggs, sautéed baby kale, and sliced up half an avocado.
Unfortunately, I didn’t have any emergency protein on hand, but eggs are always my back-up emergency protein. (When I’m outta eggs, canned tuna is my back-up back-up. And jerky is my back-up back-up back-up. Got it?)
In the afternoon, Lil-O and I finally broke free of the gravitational pull of our house and ventured to the Speck store to get new cases for our iPads.
Isn’t this iGuy adorable? I kind of want to dress him up in baby clothes.
At dinnertime, I dunked a package of duck confit into my trusty meat jacuzzi and roasted broccoli in the oven.
By the time the broccoli was toasty…
…the duck was ready to be crisped in a cast iron skillet. Afterwards, I removed the Crispy Cheater Sous Vide Duck Confit Legs from the pan…
…and stir-fried sliced summer squash…
…with cherry tomatoes…
…and fresh basil.
