Paleo Eats: 5/20/12

Greetings, earthlings.

I wasn’t terribly hungry during my 10-hour work shift, so I ended up eating only some shelf-stable snacks that I keep stashed in my drawer: Toasty Onion SeaSnax, roasted chestnuts, dark chocolate, and a package of Sophia’s Survival Food Grass Fed Spicy Jerky Chews.

In the morning, I dunked half a dozen steaks in the SousVide Supreme and hit the sack. The boys, on the other hand, spent a much more exciting day cheering on the beasts at the CrossFit Games NorCal Regionals. You can read all about it on my hubby’s blog.

When I woke up in the evening, the Double-Os filled me in on all the action. Right off the bat, Big-O informed me that a number of the male firebreathers “showed their nipples AGAIN.”

Plus, they ran into someone sporting an original Deadlift Girl tank top.

I’ve gotta admit that I was a bit blue after hearing the boys’ rundown of the day’s events; I hate missing out on the fun every other weekend because of work. Luckily, my sadness was short-lived because right after the debrief, my hubby presented me with a huge bag of treats that he’d bought from the Steve’s Original booth. He knows that a pile of grass fed PaleoKits, dark chocolate espresso PaleoKrunch bars, and dried apples has a much quicker onset than a capsule of Prozac.

Before we headed to Sancho’s Taqueria for dinner, the boys squinted at the solar eclipse…

…while I fished out the steaks from my SousVide Supreme…

…and torched one to slice up and pack in Big-O’s lunches.

At Sancho’s, I ordered a house salad topped with shrimp, carnitas, and guacamole…

…and an extra side of carnitas to take home (for just $3!).

The boys were tuckered out after their long day…

…and conked out as soon as we returned to the hotel. I wish I could’ve done the same, but duty calls. Thankfully, I’ve only got three more nights of work to go.

Let’s start with some good news, shall we?

Congrats to girlmeetspaleo, the winner of my latest giveaway! Whee! Huzzah!

My eats seem kind of anticlimactic now, but the show must go on…

I was totally dragging during my penultimate night of work — night six of seven is my least favorite ‘cause it’s always hectic and yet I still have to return for one more shift. Blargh.

While at the hospital, I downed the last of my leftover Damn Fine Chicken accompanied with broccoli and cauliflower…

…and chased it down with a package of grass fed PaleoStix and a banana.

In the morning, I picked up the Double-Os at the hotel, hustled them across town to school, and headed back to our torn-up (but thankfully silent) house for some daytime shuteye.

When I woke up in the evening, we hightailed it to Big-O’s baseball game…

…and then to dinner at Steak Out (again).

This time, the hubby and I both ordered our own sirloin steak platters — I didn’t feel like sharing tonight.

Then, I set off for work for the LAST time this week. 

Just a quick reminder: I won’t be posting my Paleo Eats tomorrow because it’s my flip day and I need some Me Time.

I received a review copy weeks ago, but I haven’t had any time to pore over it — the mini tsunami in our house, our vagabond existence, Big-O’s operating room visit, our iPad app launch, and life in general have been all-consuming. Still, Ashley’s book’s gotten great buzz from people I trust (e.g. Melicious, The Lazy Caveman, Amy, Diane) so I’m going to make time this week to read it.

Paleo Eats: 4/9/12

Hey cave friends and lookie loos!

While I spent the night at the hospital, I ate a pack of SeaSnax, a small container of Farmhouse Culture’s Kraut Salad, leftover Cheater Crispy Sous Vide Duck Confit Legs, winter squash puree, and stir-fried greens.

When I came home in the morning, I grabbed a whole boneless lamb shoulder from the fridge…

…and my mini sous chef helped me cover it with spices.

After the lamb was seasoned, I broiled it for color, plopped the shoulder on top of alliums in the slow cooker

…and went to bed. 

In the evening, I roasted a tray of broccoli in the oven…

…simmmered a speedy batch of garlic cauliflower mashed potatoes in the pressure cooker

…and shredded the slow-cooked lamb shoulder.

Here’s my dinner plate:

Lamb shoulder is my favorite cut: affordable, delicious, and hard to mess up. Please don’t ask me for the recipe — it’ll be forthcoming, I promise. 

Bay Area peeps: I bought my Lava Lake Lamb (a seasonal special) through Brandon Natural Beef, which offers free home delivery of exceptional grass fed beef. Lava Lake Lamb tastes so good (i.e. not gamey) even my picky, lamb-phobic mama gobbled up dinner.

After dinner, Fitbomb and I tinkered with the beta-version of our app until I had to skeedadle to work. This project has been a true labor of blood, sweat, and tears —  we’ve been diligently self-medicating with fermented CLO/butter oil blend (our daily teaspoon of barf) to counteract the chronic systemic inflammation.

Trust me, we want to get this baby out to you guys as soon as possible and we’ve been working our butts off to get it ready ASAP. When we announce our launch date we’ll celebrate with a bunch of awesome giveaways, ‘kay? Thanks for your patience and enthusiasm!

Did anyone eat the Easter Bunny today?

We gobbled him up last year so I thought it would be deja vu all over again if we repeated our rabbit feast in 2012. 

Here’s what I chowed on instead…

During my night shift at the hospital, I scarfed up U.S. Wellness Meats beef jerkyFarmhouse Culture’s Kraut Salad, a thermos of bone broth, leftover cross shanks/oxtails, and stir-fried Chinese greens.

I came home in the morning and hung out with the boys until they left for a family Easter party. Looks like I missed out some good eats and fun times while I was passed out in bed.

When I woke up in the evening, we met my parents for dinner at Sweet Basil Thai Cuisine in Foster City. Just like clockwork, you can always count on Asian restaurants being open on a holiday…

Even though Sweet Basil is located in an unassuming strip mall in the middle of a residential neighborhood, the food’s worth checking out. In fact, it’s a Michelin-recommended restaurant. 

We ordered a variety of dishes and shared everything family-style, including:

Roasted Duck Salad…

…Beef Larb…

…Green Curry with Chicken…

…and Garlic Prawns.

As much as I like cooking and eating “clean,” a relaxing meal out during my workweek helps keep me sane.

Happy Birthday to my crazy-cool urban farmer/meat smoker/award-winning winemaker/Double-O charmer/brother-in-law! 

While everyone else was snug in their beds, I was at the hospital passing out meds until the sun came up. My eats at work included some U.S. Wellness Meats beef jerky, Farmhouse Culture’s Smoked Jalapeno Kraut, a thermos of bone broth, and leftover Thai Chicken Curry (recipe will be available in my upcoming iPad cooking app).

When I came home in the morning, the Double-Os and I immediately began cooking up a batch of kickass Frozen Waffles from the delightful cookbook, Eat Like A Dinosaur. We’ve been dying to try these fluffy and crunchy treats ever since we got our grubby hands on Matt and Stacy’s cavekid-friendly cookbook…but we didn’t have a waffle iron anymore. 

A few days ago, I learned that Stacy bought an iPad just so she could beta test our upcoming app. Oh, the guilt I felt was palpable!

Immediately, I ordered a waffle iron from Amazon and it was on our doorstep in a couple of days. Amazon Prime is the best $79 I spend all year.

(Yes, I realize that a waffle iron ($) < iPad ($$$$$$) and I’m totally in the deficit.)

I set up the Cuisinart, dug out my Kitchen Aid mixer from the appliance graveyard in the garage…

…assembled the ingredients…

…and put my child labor force to work.


In my humble opinion, waffles are never complete until you pile on the strawberries.

How’d they taste?


The waffles were crispy on the outside, combined with a tender and subtly-sweet nutty-tasting crumb. I definitely polished more than my fair share before I went to bed.

In the evening, I filled up the SousVide Supreme

..set it to 140 F, and dunked in a couple of packages of Grimaud Farms duck confit legs and a frozen block of Cascadian Farms winter squash puree.

Once the legs were reheated, I fried up the Cheater Sous Vide Crispy Duck Confit Legs in bacon grease.

Please mind the splatter — since I was being hasty, I splashed some bubbling grease on my hands. YEOUCH!

Next, I grabbed a bunch of yu choy

….and stir fried it with green garlic, Red Boat Fish Sauce, and coconut aminos in the empty pan.

I removed the puree from the water oven and combined it with a dash of salt plus a pat of Kerrygold garlic and herb butter.

By the time it was time to go to work, I realized that my burned hand was throbbing like ker-azy. I’ll totally admit that I whimpered like a baby as Fitbomb bandaged my swollen fingers.

Argh. See? Food blogging isn’t without its occupational hazards.
