But this time, I won’t be writing detailed recaps of the symposium. After hopping on a cross-country flight immediately after finishing seven night shifts in a row (and arriving well after midnight), I’m too exhausted to engage my brain and type out a full-blown summary of AHS. I will say, though, that my favorite talk so far was by Diana Rodgers and Robb Wolf entitled “Liberation From the Industrial Food System.” Read the summary of their presentation here; it’ll open your eyes. After hearing what Robb and Diana had to say, I’m re-committing to buying my food from the farmer’s market, my CSAs, and Good Eggs. It’s the right thing for everyone.

Paleo Eats: 2/27/11

Another day of eats coming right up…

Tonight at work, my first meal of the shift was leftover tandoori chicken, sautéed spinach and bacon, and garlic cauliflower mashed potatoes.

At snack time, I threw down some leftover curried cream of broccoli soup with sous vide chicken breast.

My final meal at work this morning? A box of chili con carne-seasoned ground beef with roasted carrots and celery root and stir-fried collard greens and bacon.

After my shift was over, I drove over to the Mountain View Farmers’ Market with the boys and spent a mess of money. I didn’t need any more veggies (I’d picked up two different vegetable CSA boxes this week), but I wanted to stock up on meat, fish, and strawberries.

When we got home, I threw a bunch of pastured beef bones and aromatics into the slow cooker to simmer a pot of beef broth while I slept.

(I’ll post a recipe later this week if it turns out to be successful.)

Then, I gobbled a few squares of dark chocolate (it is an “S” day after all), downed my vitamins, and hit the sack.

When I woke up close to 6:00 p.m., my hubby had already left to pick up some kabobs for dinner from House of Kabobs. This time we ordered a bunch of skewers a la carte.

In the meantime, I got busy preparing side dishes. I roasted some broccoli tossed with avocado oil, salt, and pepper (convection roast 375 F for ~25 minutes)…

 …and wilted some Castelfranco radicchio and shallots.

After boxing up the leftovers and putting the kids to bed, I strained the beef broth and stuck it in the fridge for later. Then, I packed my grub for work and left the house. Only three more nights of work!

Paleo Eats: 1/30/11

Tonight should’ve been less hectic than the previous night, but we were slammed at work yet again. As a result, I didn’t get around to eating until 2:30 a.m.

For “lunch,” I ate a salad with mixed greens, sous vide Tabil-seasoned chicken breast, avocados, shredded carrots, red bell peppers, cucumbers, and slivered almonds.

At snack time, I ate some crudités with Aubergine dip…

…coconut flakes, a hard-boiled egg, and sauerkraut. (Don’t knock it ‘til you try it.)

My final meal of the day was a box of leftover kelp noodles.

Since my workweek has been so crappy, I decided to treat myself to a square of Valrhona 85% dark chocolate and macadamia nuts.

It was so effing good. Because I’m clearly an addict, I’m gonna have to impose the same rule I’ve laid down for the kids and limit my dark chocolate intake to “S” days (i.e. Saturdays and Sundays).

When I got home, I persuaded the entire family to pile into the car and drive to the Mountain View Farmers’ Market to pick up more veggies and meat. The sky looked ominous…

..but I was hopeful that we would escape the rain.

Boy, was I wrong. We got totally drenched.

BUT: I did manage to buy a variety of veggies, a wild King Salmon filet, pork butt roast, pork chops, and beef shanks. Thank you, hubby, for indulging me.

After I got home, I changed out of my wet scrubs, filled and preheated my SousVide Supreme to 125 F (I was gonna make some sous vide salmon when I got up), froze two small containers filled with extra virgin olive oil (for the sous vide salmon), gulped down my vitamins, and conked out.

When I woke up, I split my salmon filet in two and seasoned them with Tabil, Kosher salt, and pepper. I vacuum sealed each one with a frozen blob of extra virgin olive oil…

…and dunked the packets in the preheated SousVide Supreme for 20 minutes.

I knew I wouldn’t have a ton of time to prepare Monday’s dinner so I decided to make some braised cabbage ahead of time. The Savoy cabbage I picked up at the farmers’ market was as big as my head, so I lopped off a wedge before chopping it up and sautéing it with grass fed butter (I missed you, KerryGold!), sliced shallots, and a splash of chicken broth.

I also nuked some green beans and seasoned them with (more!) butter, Kosher salt, and pepper.

Man oh man, it sure is nice to ingest butter again now that the Whole30 program is over. I know you strict Paleo eaters out there are cringing, but let’s face it: Butter makes everything taste better!

I really like the taste and texture of sous vide salmon cooked at 125F. I contemplated brining the fish so there wouldn’t be as much white albumin coagulated on the surface, but since it’s just cosmetic, I’ll most likely continue to skip this step. Nom Nom Paleo’s all about the lazy, remember?

After dinner, I took the braised cabbage out of the oven, packed my meals for work, and cranked out a quick WOD (running, thrusters, box jumps). Then, it was off to work to bring home the bacon (which I can eat again!).

Local Spotlight: Mountain View Farmers’ Market

I’m really lucky to live in the San Francisco Bay Area, where I can choose among four incredible farmers’ markets within a 20-mile radius on any given Sunday. Still, the one I return to time and time again is the Mountain View Farmers’ Market.

This market is HUGE and the quality, variety, and value are fantastic. Some people complain that it ought to have more hot food vendors (like at the San Francisco Ferry Building Farmers’ Market or the California Avenue Farmers’ Market in Palo Alto), but I come here for the meat and veggies, not a sweet crepe filled with fresh fruit and topped with powdered sugar and whipped cream. On second thought, maybe I avoid those markets to fight temptation.

My new favorite stand at the Mountain View Farmers’ Market is the Full of Life Farm stall, which is stocked with meat, meat and more meat. Full of Life’s beef is 100% grass-fed and grass-finished; its pork is pasture-raised and free-roaming; its free-range chickens and turkeys are raised on grass and clover; and its goats are free-foraging and roaming. Locavores may be a little miffed that the meat is from the farmer’s family farm all the way up in Oregon, but on the whole, I don’t have a problem with it. Everything sold here is super-tasty and Paleo-approved. As stated on Full of Life’s website, the farm’s mission is:

to produce the healthiest, most nutritious food available anywhere for those who are concerned about the food they eat and how it is raised.

Hey! That’s sounds like me! (BTW, I finally ordered a new chest freezer just to accommodate all the tasty animal parts I’m buying.)

Here are some of my other favorite stands at the Mountain View Farmers’ Market:

  • Heirloom Organic Gardens: Farmer Grant has the freshest and most diverse selection of greens and root veggies in the market.
  • Pampero Ranch: Tasty beefalo and pasture-raised chicken!
  • Mission Fresh Fish: Super-fresh fish and seafood — it’s hard to pass this stand without stocking up.
  • Kika’s Farms: Hands-down the BEST strawberries at the market.
  • Far West Fungi: Awesome selection of mushrooms — both exotic and pedestrian varieties.
  • Happy Boy Farm: Great melons, squash, and salad greens. 
  • High Ground Organics: I already get their produce in my CSA box, but I always stop by this stand to top off with more veggies.
  • Borba Farms: awesome organic vegetables — the best haricots verts, summer squash, and bell peppers.

I know I’m missing a bunch of shout-out-worthy stands. Bay Area peeps: Help me out — what are your favorite stands?

Day 12 of Whole30 Eats

Since the kiddos were spending the night at my in-laws, Fitbomb and I were able to sleep in today after a busy night of…blogging. We’re such nerds.

Shortly after getting up, I fixed myself some breakfast. I nuked some sous vide chicken breast and roasted broccoli over leftover vegetables from the chicken-in-the-pot left in the fridge (sadly, the drumsticks are long gone).

Then, we ventured to the local farmers’ market. Without the kids tagging along, I was able to make several rounds, slowly picking and choosing my produce. Although it was nice being able to stroll through the market, I was a little sad that the boys weren’t with me to gobble our weight in samples together. When you keep returning for the same samples as a kid-free adult, it’s pretty shameful.

After a short run around a nearby lake (just for the hell of it), we returned home and I whipped up a frittata for the hubs and myself.  To make enough for the two of us, I grabbed six eggs, a couple shallots, a handful of mushrooms, a tomato, and a bunch of chard.

I thought it was done after 10 minutes under the broiler…

…but I had to stick the frittata back under the broiler to finish cooking after I cut it and saw runny egg seep out of it. Guess I was just too damned impatient for that 6-egg frittata to make its way into my mouth. 

For dessert, I treated myself to a bowl of coconut milk and some macadamia nuts and coconut flakes.

After the dishes were done, the kids still weren’t yet home, so I had some time to do some extra cooking.

In preparation of my workweek (which starts Wednesday night), I made an oven-braised beef stew with carrots, parsnips, and lancinato kale.

I was pretty pooped by the early evening, so I decided to take out the slow braised pork leg with citrus and fajita seasoning for tonight’s dinner instead of serving it during my workweek. Inspired by yesterday’s lunch at Chipotle, I made a salad with shredded pork, homemade guacamole, mini sweet peppers, cucumbers, tomatoes (from the farmers’market!), and shredded carrots.

I followed up my salad with a heaping tablespoon of coconut butter for dessert.

Today was nice, relaxing, and productive.  I was even able to flip through my new Dorie Greenspan cookbook, Around My French Table, to look for Paleo-friendly recipes. Too bad we still have our X-mas decorations up and our house is a pigsty — otherwise, I’d be gloating about our awesome homemaking skillz.
