Our busy 3-day weekend left me kind of discombobulated this morning. I couldn’t wrap my head around the fact that it was actually Tuesday instead of Monday and I’ll be returning to work tomorrow night. In other words, I didn’t get my act together to pre-cook a bunch of meals for my upcoming workweek. Oh well.
For breakfast, I fried up some mini chicken apple sausages and ate them with leftover broiled asparagus and diced avocado sprinkled with Aleppo pepper and salt.
After my women’s class at CrossFit Palo Alto, I ate half a baked yam and some organic roast chicken deli meat.
At lunchtime, I reheated some leftover braised Thai green curry and nuked some frozen broccoli.
I followed this up with ½ a bag of coconut flakes. No joke.
In the afternoon, the kids and I went to Fraiche yogurt and I treated myself to a full-fat plain Greek yogurt with toasted unsweetened coconut and diced strawberries.
Yes, newbies to the blog, I do eat full-fat dairy on occasion. No angry missives, please.
When we came home, there was a parcel on the doorstep from Steve’s Original.
I can’t wait to try all the goodies that came in the package!
The first thing I tasted was the PaleoKrunch cereal.
Wow! It was yummy, coconut-y, crunchy, and honey-sweetened. My kiddies LOVED it!
Yes, it has seeds in it (high omega-6 content) but we’re not going to eat it all the time.
Initially, I was a little hesitant to buy PaleoKits because they contain sunflower oil but after reading Steve Liberati’s detailed explanation on the CrossFit Discussion Board, I don’t have an issue with it. Plus, every purchase at Steve’s Originals benefits Steve’s Club National Program — which is an awesome cause.
For dinner, I roasted some broccoli in the oven and made a quick stir-fry with diced spigarello and leftover emergency protein.
Although I’m not looking forward to returning to work tomorrow night, I AM excited to drink more Phil’z coffee during my workweek. I need it. Really, I do.
