No time for a lengthy post tonight, so here’s a quick recap of my eats:

As soon as I woke up, I put a pre-marinated pork shoulder roast into a 275 F oven to roast ALL day.

Breakfast: Leftover frittata and roasted asparagus!

Brunch: sausage, peppers, scrambled egg, and salad at Tootsie’s!

In the afternoon, I blitzed a batch of my sister’s special Thai herb marinade…

…and marinated a bunch of drumsticks to throw on the grill tomorrow.

Dinner: The pork shoulder roast (which filled the house with awesomely porky aromas all day) was done by early evening. I took it out of the oven…

…shredded the meat…

…and dinner was served! We had tons of meat, so The Lazy Caveman came over to help us polish off as much as possible. Our plates of slow-roasted pork shoulder were topped with caramelized onions, garlic cauliflower mashed potatoes, roasted carrots, and sauteed spinach. 

Busy day ahead: More food to prep and eat tomorrow! Hitting the sack…right…now…
