Today was a looooooong day but, luckily, I chowed down healthy fuel to power me through until nightfall. After going Paleo, I’m like the goddamn Energizer bunny – even on my sleep-deprived “flip day.”

At work, my first meal was some leftover slow cooker pork pot roast, broiled prosciutto-wrapped asparagus, and garlic cauliflower mashed potatoes.  

I also chowed down ½ a cup of coconut flakes.

For my last meal at work, I ate some leftover goodies from our Easter dinner: rabbit and pork sausage, long cooked cavolo nero, and roasted curried cauliflower.

After work, I went home to pick up my mother-in-law and we went right back to the hospital for her oncology appointments.

Our nosh at the infusion treatment area was a box of leftover frittata and roasted broccoli and bacon for my mother-in-law…

…and a snack-portion of sous vide chicken breast with sautéed broccoli and shallots pour moi.

I got home in the early afternoon and took a quick catnap for a couple hours.

When I woke up, I threw together a porktastic bacon-topped meatloaf and stuck it in the oven. I nuked some frozen green beans with butter

…and roasted curried cauliflower in the toaster oven…

…to accompany the meaty loaf of goodness.
