Another day of Paleo eats coming right up!

For breakfast, hubs and I split a frittata made with leftover roasted Brussels sprouts, mushrooms, Fines Herbes seasoning, and coconut cream. I also ate some roasted bell peppers, macadamia nuts, coconut butter, and coconut flakes.

Yes, I ate all that.

To stop myself from mindlessly eating all morning, I took Little-O to the park. He spent 90 minutes chasing his two buddies all over the place and I practiced pull-ups and knees to elbows. I looked fricking ridiculous but I didn’t care.

For lunch, I heated up some leftover beef shank and cabbage stew (which actually tasted better the second go around) and served it with some greens topped with watermelon radishes and roasted bell peppers.

In the afternoon, I assembled a bacon-topped spinach and pork meatloaf and stored it in the fridge.

When we came back from Big-O’s kung fu class at 5:00 p.m., I popped the meatloaf into the oven and folded some laundry.

While the meatloaf was resting…

…I sautéed some Italian heirloom broccoli with shallots and butter.
