Day 15 of Whole30 Eats

On the Wednesday morning that I start my night shift workweek, I’m always scrambling like a mofo to get the kids presentable to the public and finish up my errands.

This morning, I was especially busy because my older son requested leftover taco meat in his packed lunch…except there were no leftovers. As a result, I had to whip up some more seasoned ground meat (this time I used ground pork) before we all barrelled out of the house at 8:05 a.m.

When we returned from dropping him off at school, I made myself some breakfast: leftover sous vide chicken breast, leftover roasted Portobello mushrooms, and nuked frozen veggies.

I would’ve added some salsa or guacamole but I was too hungry to wait.

After last minute shopping trips at Costco and Whole Paycheck, I came home and made myself some lunch. Can you believe I didn’t have a frittata today? Sometimes I can be wild and crazy like that. Instead, I sautéed some pre-washed baby spinach and sliced shallots and heated up some leftover garlic cauliflower mashed “potatoes” and the seasoned ground pork from this morning.

After a three hour nap, I woke up at 5:00 pm to make some dinner. Luckily, I had some beef stew ready to reheat.

To serve as veggie side dishes, I nuked some green beans with a few dollops of lard and a sprinkling of salt and pepper.

You don’t even miss the butter when you’ve got lard!

I also made some cauliflower fried “rice”

…and baked some sweet potatoes in my toaster oven.

Why’d I make so many veggie sides? So, I’d have a s-load of leftovers (four boxes to be exact) for hubs and I to bring to work. Yippee!

Ack! Did I just cheer about going back to work? Somebody shoot me.
