It’s my second night at work and although I’d rather be snug like a bug in my cozy bed, I really don’t have anything to complain about. 

While I was burning the midnight oil, I chowed on some emergency protein (ground pork, onions, spinach, and Magic Powder) with frozen broccoli…

…and some defrosted Hawaiian Sun coconut milk.

When I came home in the morning, I filled and preheated the SousVide Supreme to 140°F before making myself some nosh. I defrosted some frozen shrimp under running water, tossed them with homemade Tabil and salt, and seared the shellfish in ghee.

I piled the shrimp on top of a bowl of leftover kale salad…

…squeezed on some lemon…

…and gobbled it up.

I also ate some coconut butter before heading to bed.

At dinnertime, I dunked the last pre-cooked sous vide short rib and a couple packets of frozen winter squash puree into the preheated water oven

I also reheated the slow roasted duck legs from the other day…

roasted some portobello mushrooms in the toaster oven…

…and stir-fried spinach and shallots with Pure Indian Foods Garlic Ghee.

Before clanging the dinner bell, I swirled the warm squash puree with a tablespoon of Pure Indian Foods Niter Kibbeh ghee…

…and charred the short rib with my torch.
