This year seemed interminable at times – 2011 was a bumpy roller coaster ride for the Nombomb family and I’m happy to be getting off. 

My eats on New Year’s Eve were Whole30-compliant, even though I don’t officially start my month of clean chow until tomorrow. 

While I was at work, I ate a slice of leftover frittata with sauteed spinach and shiitake mushrooms.

When I got home in the morning, I filled a couple of curry flavored Pure Wraps with leftover Cheater Crispy Sous Vide Duck Confit Legs, sliced cucumber, and julienned carrots. 

The crunch and flavor combination of these wraps reminded me of eating fresh Vietnamese spring rolls. Oh, how I miss going to Vung Tau

For supper, I roasted the chicken wings I’d tossed last night with magic powder (a.k.a. porcini seasoning salt)…

baked a tray of Portobello mushrooms in the toaster oven (finished with a squeeze of lemon juice and a drizzle of organic extra virgin olive oil)…

…and sauteed some greens beans with onions and shiitake mushrooms.

After dinner, I packed my food for work and made sure everything fit the new Whole30 guidelines. 

I’m ready to greet 2012 with open arms…
