The highlight reel of my last two days of eats prominently features different ways I repurposed the leftovers from our catered party on Saturday. Every meal was different and I didn’t feel like I was eating the same thing over and over again. 

For yesterday’s breakfast, Fitbomb fried us each yummy omelets stuffed with smoked ham hocks and roasted kale. He even garnished the plate with arugula and steamed carrots – so fancy!

We ate brunch at Anatolian Kitchen

…but by dinnertime, we were craving more leftovers.

Our supper was on the table in just a couple minutes since all I had to do was plate the roasted pork and veggies.

This morning, I followed Mark Bittman’s recipe for baked eggs and tossed leftover veggies and  meat into well-buttered ramekins…

…cracked an egg in each, sprinkled on salt and pepper…

…baked them in the toaster oven for 12 minutes at 375 F…

…and promptly devoured them when they cool enough not to burn off the roof of my mouth. Yech. I hate it when that happens.

I had very little time to prepare lunch so I was happy to scarf down a bowl of leftover roast beef and veggies.

At dinnertime, we had a fun night out at The Counter with Dr. HA and our kids. Yes, I had a burger in a bowl and it looked just like all the others I’ve ever order.
