I woke up kinda groggy because I stayed up late reading my assigned chapters in Will Work For Food. Who knew homework could be fun?

To power me through a busy day, I broke my fast with a homemade espresso coupled with a bowl of emergency protein over nuked frozen broccoli.

I spent the morning playing with the kids in Lil-O’s preschool class before coming home to chow on leftover slow cooker beef shank stew, sauteed escarole, and broccoli.

Why frozen broccoli two meals in a row? It’s not because I’m trying to add more cruciferous veggies to my diet – I just need to clear room in my freezer. My gal, Fit Daffy, and I are splitting another case of Hawaiian Sun frozen coconut milk so I gotta chisel some space in my cramped icebox to fit this precious cargo. I need my chest freezer fixed PRONTO!

By dinnertime, I was pretty pooped but eats were quick to come by because the fridge was filled with leftovers. For supper, I reheated leftover Kalua Pig and braised cabbage and chopped up a few dry-farmed Early Girl tomatoes.

See? Leftovers are the new fast food!
