Paleo Eats: 7/30/12
Only a few more graveyard shifts before my vacation starts. The vintage Aiwa boom box in my brain has been pounding out the anthemic 80s power ballad, “The Final Countdown” as I stare impatiently at the calendar. Having been a goth girl in my youth (yes, really), I hated that headbanger song, but it’s got a nice beat and you can dance to it.
Actually, no. It doesn’t.

Paleo Eats: 7/29/12
I’m more than half way through with my work week, but my Flip Day still feels light years away. I’m antsy as the nutty lady from those old Mervyn’s commercials. Any of my fellow old farts out there remember her impatiently chanting, “OPEN, OPEN, OPEN…”? Anyone? Anyone…? Bueller…?
While I dealt drugs at the pharmacy, I ate a square of chocolate, my brother-in-law’s homemade...

Before I begin, I want to say thanks for your Paleo restaurant recommendations in NYC. I have a feeling we’ll be eating our way through Brooklyn. Keep leaving your gastronomic tips in the comment section of yesterday’s post, por favor.
Now where was I?
On my third night at work, I pretty much ate the same stuff as the night before. Yawn.
But when I got home in the morning, the...

Watermelon and Tomato Gazpacho
True confession: As a child, I despised gazpacho.
Ever since that fateful day I tasted the bitingly acidic sludge my gastro-curious mom picked up from the neighborhood “gourmet” deli, I swore I’d never willingly eat chilled tomato soup again. It wasn’t until years later that I begrudgingly sampled a bowl of gazpacho at Oliveto’s and the scales fell from my eyes. Oh...

Paleo Eats: 7/27/12
Work was steady and uneventful -– just the way I like it. I’d packed another bottle of bone broth, a small container of MeeNut Butter, a square of dark chocolate, and a box filled with leftover crispy duck, cauliflower rice, roasted Portobello mushrooms, and broiled zucchini.
Sounds like a lot, but I finished everything and even had room for half of a Cacao Now! from Paleo Treats when I came...

Paleo Eats: 7/26/12
I’m back to eating meals in the middle of the night again…
On my first night back at the hospital, I sipped from a big Thermos filled with bone broth and ate sous vide sirloin steak and leftover roasted Portobello mushrooms and broiled summer squash.
(If you’re admiring the cool stainless steel food container, it’s a medium-sized LunchBots Clicks. I LOVE them.)
One of the pluses...

Paleo Eats: 7/25/12
After three weeks of vacation, I actually kinda welcomed my Flip Day — the day I change back into a creature of the night for a week-long string of graveyard shifts. This is especially true because I know I’ve got yet another (longer!) vacation waiting for me starting August 1st. But before I get ahead of myself, here’s what I ate today…
While we got the boys dressed and fed for day camp, I...

Paleo Eats: 7/24/12
My kiddos don’t seem to understand that their mom needs her beauty sleep. Every single day, they’re up at the crack of dawn, scampering down the hall and clamoring for breakfast.
Well, every day except for today.
This morning, I was the first one awake at 7:30 am — which meant I only had 15 minutes to get out the door for my ACLS recertification class. Sacré bleu! In the blink of an...

Paleo Eats: 7/23/12
Yikes. Tomorrow’s my big ACLS test at work, but I still haven’t finished studying. This reminds me of my college days: Prolonged periods of laziness, interrupted by frantic intervals of late-night cramming. Fun times.
Two decades later, I’m slightly more mature, but I’m still a big fan of putting things off. So in the name of procrastination, here’s a rundown of what...

Paleo Eats: 7/22/12
Sorry, Nomsters — I have no time to write a lengthy post tonight. I’m busy studying for a recertification for work (a.k.a. my real job!) and I have to keep my nose to the grindstone. I’ll just leave you with some photos and brief captions to describe my day of eats, okay?
My sister and brother-in-law made a blink-and-you’ll-miss-‘em appearance in the Bay Area this...

Roasted Green Beans
Before anyone gets on my case about whether green beans are Paleo, I eat them when they’re in season because they’re more pod than bean, and because Robb Wolf, Mark Sisson, and Whole9 say it’s a-OK. So there.
My favorite way to cook these green pods is to roast them in a hot oven after they’ve been tossed with melted fat and lightly drizzled with fish sauce. When they...

Paleo Eats: 7/20/12
The Double-Os spent the night at my parents’ house, but that didn’t mean I got to sleep in. My hubby and I had a morning business meeting to attend, so we hopped in the car as soon as I could make myself (somewhat) presentable. With no time for breakfast, I just grabbed a handful of macadamia nuts and a package of Paleo Jerky from Itsumo Ahi Tuna Jerky on my way out the door.
When we...

Paleo Eats: 7/19/12
Now that we’re back from our trip, I’m treating the rest of my PTO as a staycation. But we’re still in a vacation mindset, so the kiddos and I woke up late, and we decided to go out for breakfast.
Bad idea.
We headed to a local “healthy” breakfast place, figuring there’d be a bunch of Paleo-friendly options on the menu. Wrong. No joke: the restaurant’s only bacon...

Paleo Eats: 7/18/12
When I stay up late blogging — in other words, every night I’m not slinging drugs at the hospital —- the last thing I want to do is wake up early the next day. But before the sun came up this morning (but after my early-bird spouse had already left for his 5 a.m. CrossFit class), Lil-O wandered into our bedroom and insisted that he and his two stuffed kitty-cats had to crawl into bed...

Paleo Eats: 7/17/12
It sure feels nice to be home again after our whirlwind trip to Southern California. I feel like we just moved back into our house, only to pack up and leave again. Wait. That’s exactly what happened. In fact, when we got home on Monday, the house still had a new-floor smell.
The boys are camp-free this week, so I enjoyed the rare luxury of a leisurely morning. For breakfast, I made myself...

Paleo Eats: 7/15/12 (2012 CrossFit Games Day 3)
We woke up late this morning. This would normally be a good thing, but it was the final day of the CrossFit Games, and the morning’s events were already starting. My hubby threw some clothes on the kids while I packed nuts, leftover kabobs, steamed vegetables, and lettuce-wrapped roast beef tacos to take to the Games.
By the time we arrived at HDC and snagged our seats, the women were...

Paleo Eats: 7/14/12 (2012 CrossFit Games Day 2)
Our family was ready to tackle another long day at the CrossFit Games, but we were in no rush to get there early ‘cause our plan was to stay until the bitter end — or until the kids wilted, whichever came first.
No room service breakfast for us. Instead, we filled up on nuts, strawberries, and lettuce-wrapped tacos filled with roast beef and grape tomatoes.
Picky Lil-O is finally...

Paleo Eats: 7/13/12 (2012 CrossFit Games Day 1)
Our day started bright and early because the Nombomb clan was excited to root for our favorite athletes on the first day of the 2012 CrossFit Games.
Although we were up by 7, we didn’t arrive at Home Depot Center (HDC) until close to noon. Why the delay? Well, food takes precedence over everything in my world, and I needed to pack some Paleo-friendly fare (roast beef, veggies, guacamole, nuts,...

Paleo Eats: 7/12/12
Lazy morning. The kids were up bright and early — it was the Double-O’s last chance to hang out with S & B’s girls — but none of us were in any rush to pack up and go. Our hosts have spoiled us these past few days, and if put to a vote, I have a sneaking suspicion some of my family members would elect to stay indefinitely.
For breakfast, I whipped up some omelets...

Paleo Eats: 7/11/12
After two exhausting days shuffling around Disneyland like post-apocalyptical zombies, the Nombomb clan made a pledge to relax and unwind today. For breakfast, I rifled through our hosts’ well-stocked fridge and assembled a quick breakfast. I mashed up a couple of baked yams with leftover masala-spiced barbecue salmon and spooned the mixture into lettuce cups.
Everyone needs to stay with pals...

Paleo Eats: 7/10/12
After twelve hours of hopping back and forth between the two Disneyland Resort theme parks, I’m thoroughly cooked.
I knew I was in for a long day when I woke up with achy feet and saw that the mercury was climbing into the 90s. I flirted with the idea of telling the kids we lost our Disneyland tickets (oh, well — maybe we can read quietly and take naps instead!), but I’m a terrible...

Paleo Eats: 7/9/12
Believe it or not, eating Paleoish at the Happiest Place on Earth is possible. In fact, when I get around to it, I’ll write an entire post devoted to Paleo Eats at Disneyland. But after a loooong day at the amusement park, sprinting to rides and then shuffling along at a snail’s pace once in line, the soles of my feet are aching and my eyelids are heavy. I’m too exhausted to write a long...

Paleo Eats: 7/7/12
With our trip to Ell-Lay looming, I should’ve been prepping and packing non-stop, but all I wanted to do was climb back into bed and nap the day away. Too bad the kids are too noisy and needy for that fantasy to become reality.
Darn kids. Why can’t they water themselves?
When I finally made my way to the kitchen, I fried a couple of eggs and and tossed ‘em back with wild salmon...

Paleo Eats: 7/6/12
It was 7:10 a.m., and I was the last one in the house to roll out of bed. For those of you whose living quarters don’t explode with the sounds of small children at the crack of dawn, this is considered late.
To prepare for the women’s class at CrossFit Palo Alto, I threw a tray of yams in the oven so I could chow on one post-workout…
…and for my pre-workout grub, I grabbed a...

Paleo Eats: 7/5/12
I popped out of bed bright and early this morning because I had a podcast date with Diane, my pal who blogs over at Balanced Bites. In her honor, I reheated a mug of bone broth and fried up a rasher o’ bacon for breakfast.
After throwing together Big-O’s camp lunch and fixing everyone’s breakfast, I roused the rest of the clan and locked myself in the guest room with a telephone so I...

Listen Up! I'm on The Balanced Bites Podcast!
Yo, peeps! After fueling up with bone broth and bacon for breakfast, I spent a good chunk of the morning chatting with my buddy Diane Sanfilippo of Balanced Bites on her podcast. Diane’s site is one of my favorite resources for practical advice about implementing a Paleo lifestyle, and her podcast (with Liz Wolfe of CaveGirl Eats) is a must-listen. Liz wasn’t able to join us today, but...

Guess who’s feeling much better?
One week out from his tonsillectomy and Big-O is pretty much back to his normal self. That makes heading in to work every night much less stressful. Phew.
While I was at working my penultimate graveyard shift of the week at the hospital, I chugged a Thermos of bone broth and gobbled up a box of leftover sous vide steak, grilled eggplant, and stir-fried...

Paleo Eats: 7/2/12
People often ask me what the Double-Os are doing while I’m cooking dinner. The answer: I tie them up in the garage and give the rope just enough slack so they can pee in a plastic bucket in the corner. And then we collect the urine and boil eggs in it.
Now back to my eats for the day…
My week of graveyard shifts has been humming along smoothly, and day five of seven was no different. I packed...

The hospital was less busy than normal. Did folks get the memo that new interns (a.k.a. Baby Docs) were starting this month? I don’t want to scare anyone, but if you can help it, try not to be hospitalized in July.
While I burned the midnight oil at the pharmacy (we keep a big vat of oil there — right next to the Vicodin), I chomped on leftover sliders, kimchee, and roasted broccoli.

Tabil Seasoned Sautéed Shrimp
[UPDATED July 1, 2012: This ain’t a new recipe (it’s from over a year ago), but it continues to be popular and the old photos were all kinds of horrible, so I updated this post with new pics. Enjoy (again!)]
Frozen shrimp can be a godsend when you don’t know what to cook for dinner. Tonight when I woke up, I putzed around the kitchen in a daze until I remembered I had a bag of...

Paleo Eats: 6/30/12
My work-hubby is off for a couple of nights to attend a wedding, so I was on my own after 2:30 am. The last time he disappeared for vacation, the pharmacy was out-of-control crazy busy. Steeling myself for more of the same, I brought my meal in a LunchBots Clicks so I could gobble it all up straight from the fridge: sous vide tri tip, roasted broccoli, and napa cabbage kimchee.
Luckily, my...
