Paleo Eats: 1/31/12
Just so you know, I didn’t devour a baker’s dozen of donuts when the clock struck midnight.
Instead, I chowed on a can of sardines and downed a small glass of defrosted coconut milk. Not quite as sexy as a box of deep-fried sugary gluten, but my protein- and fat-packed nosh fueled me for the rest of my busy night shift.
When I came home in the morning, I rolled a few slices of my...

The Whole30 Recap: EVERY SINGLE DAY.
I just completed my second Whole30! I’m happy I did it and glad it’s over. Doing a Whole30 isn’t that much of a change from my usual diet because I have to eat clean 95% of the time to fuel my busy life. However, I recognized that I was getting kind of sloppy during the holidays and decided to commit to a month of super-mindful eating.
It was much easier completing this...

Paleo Eats: 1/30/12 (Whole30 Day 30)
Yippee! It’s my last day on the Whole30!
During my night shift, I ate some chicken salad over mixed greens…
…and a small container of defrosted Hawaiian Sun coconut milk.
When I got home in the morning, I whisked some eggs with salt & pepper…
…plunked them in the SousVide Supreme…
…drizzled on homemade Pyro Powder, and split the...

Paleo Eats: 1/29/12 (Whole30 Day 29)
It’s my penultimate day on the Whole30!
While I was burning the midnight oil at the hospital, I snacked on Applegate Farms organic roast beef and carrots stick and my main meal was leftover Slow Cooker Korean Short Ribs, cauliflower & carrot puree, and broccoli.
When I got home in the morning, I seasoned some chicken breasts with Sunny Spain seasoning and kosher salt…

Video: Here Comes Your Mayo
When I got off work this morning, I saw that reader Marcia wrote a very nice comment on my last post. It included this request:
“If you’re not busy, how about a mayo video?”
Marcia, Marcia, Marcia. Don’t say I never do anything for you. Without further ado, here comes your mayo.
(Note: For this morning’s batch of mayonnaise, I didn’t use my immersion...

Paleo Eats: 1/28/12 (Whole30 Day 28)
Just two more days on the Whole30! I’m tired of making all of my meals and I can’t wait to go out to eat again. There, I said it.
While I was at the hospital, I ate some leftover sous vide pork belly, cocoa-toasted cauliflower, and sauteed baby kale.
When I got home, I gobbled up a sous vide chicken breast dusted with homemade Pyro Powder and drizzled with extra virgin olive...

Paleo Eats: 1/27/12 (Whole30 Day 27)
Only three more days left on the Whole30!
For my nosh at work, I packed some leftover Burger Bites, braised kale, and sauteed mushrooms. It was muy busy at the hospital and I didn’t get to eat my lunch until close to 5:00 a.m.
When I came home in the morning, I quickly wolfed down half a package of Applegate Farms organic roast beef, a handful of coconut flakes, and some toasted...

Review of Paleo Pals: Jimmy And The Carrot Rocket...
Without a doubt, Sarah Fragoso’s blog and book have helped us tremendously to get our whole family on the Paleo bandwagon. If you missed my last mash note to her, you can read it here.
It’s no secret that changing our kids’ diets hasn’t been easy. Big-O has an adventurous palate and will happily munch on meat, veggies, and even worms, but Lil-O proudly proclaims that he,...

Paleo Eats: 1/26/12 (Whole30 Day 26)
Just four more days on the Whole30!
On my first night back at work, I downed a bowl of leftover curried cream of broccoli soup, guacamole, crudities, and leftover sous vide flatiron steak.
After work, I scarfed down a plate of scrambled eggs seasoned with Magic Mushroom Powder and Parisien Bonnes Herbes.
I shuttled the kiddos to school and came home to pass out.
In the evening, I...

Paleo Eats: 1/25/12 (Whole30 Day 25)
Because my week of night shifts was starting tonight, the morning was filled with cooking and errands.
The pork shoulder roast and belly were already soaking in the SousVide Supreme for tonight’s dinner but I wanted to get a head start on tomorrow’s supper as well.
Tomorrow night, we’re chowing on Slow Cooker Korean Grass Fed Short Ribs with short ribs from Brandon Natural...

Paleo Eats: 1/24/12 (Whole30 Day 24)
Oooh! I have less than a week left on the Whole30. My jeans don’t feel quite so snug anymore, which is nice.
This morning, I sous vided some scrambled eggs…
…and gobbled them up along with a helping of leftover braised kale.
I love how the water oven makes the eggs all soft and custardy — with no furious whisking and monitoring required.
My morning was...

Giveaway Time! Win A LunchBots Trio & Quad!
**UPDATE: Giveaway is OVAH!**
This weekend, I had the pleasure of working out with Jackie Linder, the founder of LunchBots, at the Catalyst Athletics Olympic lifting seminar. I know I’ve spoken of how much I admired her from afar in my previous LunchBots giveaway, but after sharing a barbell with her for two days, I have even more respect for this thoughtful and passionate entrepreneur.

Gung Hay Fat Choy! Happy Chinese New Year everyone!
Traditionally, a good Chinese person is supposed to abstain from meat on the first day of the New Year to ensure longevity. Well, F- that!
There’s no such thing as Meatless Monday in the Nombomb household.
For breakfast, I slurped down a bowl of pressure cooker oxtail bone broth…
…and a small cup of coconut cream.

I’m bushed right now. You would be too if you spent two whole days learning how to properly perform clean & jerks and snatches at Catalyst Athletics.
Here’s super quick recap of my chow today:
Before we left for the Olympic lifting seminar, I fried up some Paleo-compliant duck sausage from 4505 Meats…
…and reheated leftover braised spicy kale for breakfast.

Paleo Eats: 1/21/12 (Whole30 Day 21)
Me: “You know what?”
Fitbomb: “Chicken butt.”
A few moments later…
Me: “You know why?”
Fitbomb: “Chicken thigh.”
Despite being my best bud during my freshman year in college, Fitbomb would always infuriate me by answering my oh-so serious questions with inane rhymes. He’s damned lucky that 19 years ago today, I told him that I had...

Paleo Eats: 1/20/12 (Whole30 Day 20)
Fitbomb and I stayed up late last night working on our side project so I was especially grumpy when the Double-O’s barged into our room at 7:00 a.m. on the dot. Mommy really needed her black espresso this morning. Since I still had a hacking cough, didn’t get enough sleep, and the boys had no school, I decided to skip out on my class at CrossFit Palo Alto. Are those good enough...

Ack! Or should I say, “Hack!”? I was coughing my head off last night and as a result, getting up this morning was a Herculean task. I finally dragged my disheveled self out of bed because I was scheduled to work in Lil-O’s classroom. Don’t fret! I’m not contagious anymore even though I sound like it.
Before heading to the preschool, I inhaled a bowl of leftover...

Paleo Eats: 1/18/12 (Whole30 Day 18)
I’m super tired tonight. It’s my flip day (the day I transform from a sun-shunning zombie back into a vitamin D-synthesizing human), so this post on my eats will be quick.
My grub on my last shift at the hospital consisted of two cups of piping hot bone broth and a pack of Just Jerky. I wasn’t very hungry because I had stuffed myself with chicken and veggies before coming to...

Paleo Eats: 1/17/12 (Whole30 Day 17)
Let’s see what I ate today…
During my night shift, I ate a couple of hard-boiled eggs dusted with Magic Mushroom Powder, sliced red bell peppers, and some leftover emergency protein accompanied with frozen broccoli.
I also nursed a big thermos filled with steaming bone broth.
Not super exciting chow but it kept me full and energized until morning.
When I came home, I marinated...

Quick Pressure Cooker Bone Broth
There’s nothing I like more than a nice steaming mug of bone broth to get me through the cold winter months. It warms me from the inside out and it’s so good for you: check out why in these great posts by Mark’s Daily Apple and Balanced Bites.
I have a recipe for simmering bone broth in the slow cooker and my mom routinely makes a pot on the stove but sometimes I just want a...

Giveaway Time! Win A Copy of Well Fed!
As I’ve mentioned before, I’m keeping a copy of Melissa Joulwan’s cookbook, Well Fed, on my kitchen counter this month to keep my Whole30 on course.

The Whole30 is easier for me to follow when I’m at work. I think it’s ‘cause I have to eat what I pack and there’s no way to stray in the middle of the night. In contrast, when I’m at home, I just munch my way through the pantry.
While I was passing pills at work, I ate some baby carrots, Persian cucumbers, hard-boiled eggs dusted with homemade Pyro powder, and...

…and helped dress the kids for school.
I headed to the women’s class at...

Brussels Sprouts Chips
If you’re a closet snacker like me, you’ll want to make these chips anytime you buy Brussels sprouts. Whenever I prepare my sprouts for roasting, I cut the stems off right at the base of the baby cabbages and pull off the outer leaves. Nowadays, instead of chucking the leaves into the trash, I toss them in fat and bake them into crunchy chips. (Please discard the really wilty ones.) My thrifty...

I’m already in the double digits of my Whole30 and it’s still been smooth sailing. Because I’ve got a set of rules in place, I’m not tempted to go buy a bar of dark chocolate bar or a pint of heavy cream for my coffee because, well, I can’t. I’m such a conformist and I definitely listen to The Man and The Woman (a.k.a. Dallas and Melissa).
In the morning, I was greeted with the drool-inducing...

Day 9 on the Whole30 coming right atcha!
This morning, I had a date with Helen at my CrossFit Palo Alto womens’ class so I inhaled half an Asian-style Scotch egg (from Well Fed), a black espresso…
…and a shot glass of coconut cream before heading out.

For breakfast, I ate yesterday’s lunch: Slow Cooker Roast Chicken and Gravy, cauliflower puree, and...

Paleo Eats: 1/6/12 (Whole30 Day 6)
Last night I dreamt that I downed a tall, frosty glass of sweet and creamy chocolate milk. Needless to say, I woke up screaming.

I was wiped out after the chipper and nourished myself with some carbs and protein: a nuked yam, hard...

I’m truckin’ along on my Whole30 and I gotta tell you: It’s a lot easier the second time around. I’ve felt great from the start, and the meal planning has been pretty painless. I guess I can abstain from dark chocolate and mac nuts if I really want to — which will only happen about once a year. (Mac nuts are allowed on the Whole30 but I’m abstaining because I...

D.I.Y. Ghee
I love ghee, and am ecstatic that it’s Whole9-approved for the latest version of the Whole30. Ghee — a traditional Indian preparation of clarified butter — has been one of my go-to fats for high-heat cooking ever since I went Paleo, and I use it to prepare everything from vegetable stir-frys to meaty stews.
Yes, it’s cheaper and easier to get your hands on butter, and...

Paleo Eats: 12/31/11

While I was at work, I ate a slice of leftover frittata with sauteed spinach and shiitake mushrooms.
