Paleo Eats: 5/31/11
Our busy 3-day weekend left me kind of discombobulated this morning. I couldn’t wrap my head around the fact that it was actually Tuesday instead of Monday and I’ll be returning to work tomorrow night. In other words, I didn’t get my act together to pre-cook a bunch of meals for my upcoming workweek. Oh well.
For breakfast, I fried up some mini chicken apple sausages and ate them with...

Dining Out Paleo: Locanda (San Francisco)
Man, hubs and I haven’t had a date night since we went to Station 1 a few months ago. Damn those pesky kids!
I LOVE eating out so we were really excited to try Locanda with two of our favorite people in the world, S & J. Incidentally, our buddies are not (yet!) on the Paleo bandwagon, but we love them anyways. Plus, despite the fact that they haven’t guzzled the Kool-Aid themselves,...

Paleo Eats: 5/30/11
Today was a great finish to a wonderful holiday weekend. Hubby and I were able to sleep in until 8:00 a.m. since the kids were crashing at my parents’ house. Yes, childless people, 8:00 a.m. is really LATE.
Since I had been peer-pressured and shamed into doing Murph at CrossFit Palo Alto at 9:00 a.m. (you all know who you are!), I fueled up on some melted coconut butter (fat!) and Applegate Farms...

Wow! We had so much fun on Sunday! Here’s how we spent the day…
When I got up this morning, I strolled down to Phil’z Coffee and filled up two large thermoses from home with Tesora brew (with heavy cream and no sugar). I think I intentionally got less than 6 hours of sleep so I’d have an excuse to feed my new addiction.
At home, I heated up a couple leftover sous vide Turkish meatballs, sautéed...

I had a fun-filled day eating clean grub, but dude — I’m tired. Here’s a quick recap of my day:
We ate brunch at Rick’s where I split a couple of protein-packed dishes with my hubby: Wteak and eggs with a side salad (hold the dressing)…
…and a crab, avocado, tomato and onion scramble (hold the cheese).
For dinner, we hosted a Paleo meal with The Lazy...

Here’s another quickie write-up about my eats today. I purposely didn’t create a new recipe so I wouldn’t have to write a long post. Geez, this blog is taking over my life! In all seriousness, I’ve got some new recipes down the turnpike – I just have to get over my biweekly post-work hangover first.
Breakfast: I made myself a three-egg scramble with leftover chicken apple sausage, frozen...

Last night of work! I was beginning to think it would never come…
For my first meal of the shift, I downed some leftover spigarello and shredded carrot stir-fry mixed with roasted chicken.
Later, I ate a package of spicy grass fed jerky chews.
And for my last meal at work, I had some leftover braised thai green curry and green beans.
After my shift ended, I had two hours to kill at the...

Here’s another day of Paleo eats…
My first meal at work was some leftover roast chicken, Asian cauliflower fried rice, and roasted bacon and broccoli.
I’ve been meaning to eat this lunch for several days but it was languishing in my work fridge because I was either too busy to nuke it or I wasn’t hungry enough.
For snack, I gobbled up a package of grass fed jerky chews and a small container...

A lot of badness has gone down since my last post so I’m tired and cranky.
Since I was scheduled to work most of my night shift solo, I knew I had to pack food that I could just grab and eat at my desk. During my 10-hour shift, I ate a packet of spicy Grass Fed Jerky Chews and a can of sardines. Doesn’t sound like a ton of food, but it kept me full until the end of my shift. (Protein +...

Braised Thai Green Curry With Grass Fed Boneless...
On my list of favorite ethnic cuisines, Thai food is actually pretty low. I think I always found it too sweet, too spicy, or both. But after going Paleo, I’ve noticed that Thai curries are a popular dish for cavepeople. Sarah Fragoso and Dain Sandoval have posted recipes for green and red curry, respectively. Intrigued, I decided to give Thai cuisine another shot.
I wanted to try my hand at...

Yay! It’s my hump day at work!
My first meal at work was some leftover Asian almond chicken salad.
Since I was still hungry and wanted something sweet, I ate a small Primal Pac.
Speaking of portable Paleo treats, I ordered a ton of goodies from Steve’s Original that I can’t wait to try. It’s really wonderful that 15% of all proceeds go to benefit Steve’s Club, a national program that gives...

Wanna check out what I ate today?
The only thing I ate at work was some leftover semi-homemade meatballs and sautéed spinach.
I wasn’t super hungry so I didn’t eat a snack or the second meal I brought for work.
After I left the hospital, I met up with the kids and my hubby for brunch (or dinner for moi) at Rick’s. I ordered a plate of steak and eggs with a side salad.
Again, my meal was...

Asian Almond Chicken Salad
I’ve been hankering for an Asian chicken salad with a nutty dressing for a while – especially since I got my hands on some Red Boat fish sauce.
When I held the Red Boat fish sauce Twitter and Facebook giveaway a few weeks ago, George Z. posted a recipe for a Thai “peanut” sauce that he originally found on the wonderful Primal food blog, This Primal Life. I modified it a little bit by adding a...

I’m knee-deep in my workweek so I just have to slog through six more nights.
My first meal at work was some leftover duck confit, winter squash puree, and braised cabbage.
The skin on the duck wasn’t crispy anymore but it was still tasty.
At snack time, I ate a bag of grass fed jerky chews. I know this might sound weird, but because they’re thinly sliced and dry, the chews almost taste...

Zucchini Spaghetti (Zoodles!) & Meatballs
I just got a new kitchen gadget that I’m totally crushing on…
…a julienne peeler!
It makes me want to make noodles out of every vegetable in my crisper! Yes, I have a mandolin and a food processor but this tool is efficient, compact, inexpensive, and quick to clean. You can have “noodles” on the table in no time flat!
Here’s what I gathered to make zucchini noodles for 4 people:

It’s my first night back at work – the first of seven. Ugh.
My first meal at work didn’t occur until 3:00 a.m., when I ate some leftover Egg Foo Young-ish pancakes with guacamole and Primavera salsa…
…followed by a small Primal Pac. I’m really loving the Primal Pacs — savory, slightly sweet, and really satisfying.
The last thing I ate at work was some leftover slow...

I went back to work tonight so my morning was busy, busy, busy.
We were out of our normal grocery store purchased bacon, so I defrosted a hunk of smoked swine that I’d bought from the Full of Life Farm stand.
Now that is some serious bacon – no low-fat, center-cut shit for me!
I sliced it up (in my new T-shirt, no less)…
…baked a tray of bacon in the toaster oven…
…and...

Capitalism is a Wonderful Thing
Hey, look! Shirts!
At long last, readers can now openly flaunt their everlasting allegiance to moi! MWAH-HAH-HAH-HAH!
Seriously — I’m purdy darn happy with these tees. We ordered a bunch of them last week to check out the fabrication, fit, and print quality, and I’m proud to say I’d actually wear these shirts outside of my house. I hope you like them as much as I do!

Yikes! How did the week pass by so quickly? I have to go back to work tomorrow night so I spent part of the day cooking up a storm for the workweek ahead.
For breakfast, I made myself a scramble with frozen spinach, sliced bratwurst, and Sunny Paris seasoning.
I also savored a large spoonful of coconut butter before dashing off to my class at CrossFit Palo Alto.
When I got home, I ate a post...

The weather was downright dreary this morning in the Bay Area so I decided to make some sunny-looking Egg Foo Young-ish pancakes filled with ham and spinach for breakfast.
At lunchtime, I ate a plate of leftover slow cooker pork pot roast and nuked broccoli.
Then, I seasoned a whole chicken and threw it in the slow cooker for dinner tonight.
For snack, I ate some macadamia nuts, coconut...

Egg Foo Young-ish (Spinach, Egg, Ham, & Coconut...
After gobbling up Fitbomb’s quick and easy savory coconut pancakes yesterday, I was inspired to come up with a version filled with veggies and meat. After eating one of my portable egg-y pucks, hubby exclaimed that they tasted like Egg Foo Young.

When I woke up this morning, I wanted to make a few items from my new cookbook, Mark Sisson’s Primal Blueprint Quick & Easy Meals.
I made a batch of Nutty Strawberry Protein Balls…

For breakfast, I scarfed down the frittata, a nutty protein ball, and a big dollop of coconut butter.
When I finished breakfast, we drove up...

Savory Coconut Pancakes
Hubby was experimenting in the kitchen and he came up with a recipe for super simple savory coconut flour and egg pancakes. I have to admit that I was pretty dubious when he started throwing everything together, but the pancakes ended up tender and tasty!

3 eggs
2 tablespoons of coconut flour (amount varies by brand & how dense you...

Soufflé Frittata
I love making frittatas because they’re so easy, tasty, and versatile However, even this frittata lover can get tired of them — even with different fillings. Luckily, I came across a new variation in Mark Sisson’s Primal Blueprint Quick & Easy Meals – soufflé frittatas!
All you do is separate the whites from the yolks, beat them separately, and then fold in the yolks and your...

Primal Blueprint Nutty Strawberry Protein Balls
I’m a fan of Mark Sisson and his blog, Mark’s Daily Apple. In fact, I totally credit him for starting me on my Paleo journey. Sisson says there’s an 80/20 rule when it comes to eating like a caveperson? Hell, I can do that! Nowadays, I’m actually closer to 95/5 — but The Primal Blueprint was a great starting point for someone like me, who was hesitant to hop aboard the Paleo gravy...

I may be coming down with a cold (oh noes!) so this post will be short and sweet. Making Kleenex-wrapped booger wontons with Lil-O and going balls to the wall in today’s WOD at CrossFit Palo Alto may have a little something to do with it.

My first meal at work was some leftover slow cooker roast chicken and stir-fried veggies.

Let’s take a peek at what I packed for my meals at work today…
My first meal of the day was a big ass salad made with leftover slow cooker roast chicken, baked bacon bits, avocado, shredded carrots, sliced cucumber, and mixed greens.
It’s been a while since I’ve brought a salad to work and I’ve forgotten how convenient (i.e. no reheating necessary) and tasty they are.
As a mid-shift snack, I...

Yay! It’s finally my hump day at work! Too bad I still have 40 hours of work left this week…
My first nosh at work was a snack-size portion of Trader Joe’s organic peppered beef jerky. Okay folks, this ain’t my favorite jerky – it’s too sweet (yes, it has sugar in it), contains soy sauce (gluten free), and has an icky wet texture. Blargh! I guess it serves me right for choosing cheap and...

Bo Kho (Spicy Vietnamese Beef Stew)
Vietnamese is, hands-down, one of my favorite cuisines. I love how most dishes combine salty, sweet, sour, and umami. Plus, my favorite items have contrasting temperatures and textures which makes it feel like I’m hosting a party in my mouth.
Unfortunately, I rarely eat Vietnamese food nowadays because there’s sugar in most dishes, it’s grain-heavy (e.g. pho, banh mi, bun, etc.), and almost...

Argh. I went back to work tonight. Wanna see what I ate up until I headed into the hospital?
This morning was another sunny day in the neighborhood. I love this weather – unless I’m trying to sleep during the day. Curse you, sun!
