Paleo Eats: 3/31/11
I had a busy, busy day and I’m still a little wonky from lack of sleep so this post will be short and sweet.

Slow Cooker Pork Pot Roast
I know that it might seem like my SousVide Supreme holds favored appliance status in the kitchen (and it does), but slowly, yet surely, my cheap-ass Crock-Pot is coming in out of the doghouse.

Sous Vide Rack of Lamb (Take 2)
Our meat CSA had a 10% discount on all lamb products this month, so I stocked up our chest freezer with mutton-y goodness. I’ve made sous vide rack of lamb before with good results so I wanted to make them again tonight.

There’s no better way to start the day than with a frittata. The one I cooked this morning contained 3 pastured eggs, sautéed mushrooms, nuked frozen spinach, leftover broiled asparagus, Sunny Paris seasoning, and a splash of organic heavy cream.

Sous Vide Grass Fed Rib Steaks
Tonight, I experimented sous viding another cut of grass fed beef, rib steaks from Full of Life Farm. Rib steaks, a.k.a. cowboy steaks, are rib eye steaks with the rib bone still attached.

Sous Vide Soft-Boiled Eggs (First Attempt)
I’ve always wanted to cook eggs in my SousVide Supreme but I’ve never made them until tonight. There’ve been lots of aborted attempts because by the time I want to make them I’m too dang hungry, tired, or impatient to wait an hour for the eggs to cook. Yes, you read that right.
